I really don’t like to have bittergourd. But my husband loves and my MIL specialises in bitter gourd recipes. One such recipe from her
- Bitter gourd-5(small)
- Tomato-1(medium sized)
- Onion-1(medium sized)
- Channa dhal-1/4 cup
- Chilly powder-1 tbsp
- Tamarind extract-1/2 cup
- Salt-To taste
- Oil-To cook
To temper:
- Mustard seeds-1/4 tsp
- Urad dhal-1/4 tsp
- Curry leaves
Procedure:
1.Finely chop bittergourd,onion,tomato.
2.Soak tamarind in hot water and separate the extract
3.Pressure cook channa dhal and mash them.
4.Add oil in a pan and temper with mustard seeds,urad dhall and curry leaves.
5.When tempering is done,saute onion and tomato till they turn soft.
6.Now add bitter gourd and fry them until they get soft.
7.Add chilly powder and give a quick stir.
8.Add around 1/2 cup of water and cook the bittergourd.
9.Now add salt and tamarind extract.
10.When the raw smell of tamarind vanishes add channa dhal and mix it well.
11.Serve it hot with rice.
P.S:
If you don’t want the bitter taste of the bittergourd,soak the chopped pieces in salt water. But be sure to adjust the salt quantity later.
You can add a pinch of jaggery if you wish.
