DRY FRUITS BURFI OR ENERGY BARS RECIPE:

DRY FRUITS BURFI OR ENERGY BARS- Diwali/Deepavali is slowly peeping every household and I can feel the glitters in the air. I am sure all of you are getting ready in all aspects like making sweets & savoury, purchase, pooja preparations.

I began my preparations last week and I wanted to attempt different but easy recipes for this Diwali. I occasionally came across this recipe of DRY FRUITS BURFI OR ENERGY BARS in a magazine and prepared myself to make it right then.

I made a few alterations however as per my family’s preference. This is an excellent healthy, nutritious and power packed sweet for this festival and it can be your baby/toddler snack, school goer’s evening snack , travel food option.

Ingredients:1 cup=250 gm

  • Fig(Dried)-1 cup
  • Raisins-1/2 cup
  • Cashews-1/4 cup
  • Almonds-1/4 cup
  • Dates-1/2 cup(de-seeded)
  • Ghee-5 tsp+1 tsp(To coat)
  • Cardamom-2/Cardamom Powder-1/4 tsp

Procedure:

1. Remove impurities if any from the ingredients and get them ready.

2.In a sauce pan heat some water.

3. In the mean time add cashews and almonds to the mixer and give a quick run.

4.Separate the powdered/half split cashew+almond and set them aside.

5.Now add dates and raisins in the same mixer and make them a paste.

6.When the water is boiled add the figs and close it and keep it aside for 15 minutes.

7. Drain water from the fig and cool them.

8. Add cooled figs to the mixer and blend it well.

9. In a pan, add ghee and let it melt.

10. Add the fig paste and saute it for two minutes.

11. Now add dates+raisins mixture and mix them well with fig.

12.Finally, add powdered cardamom and almond+cashew powder.

13.Saute everything together and ensure that they have blended well.

14.The paste will turn out non sticky from the pan. Stop cooking at this stage.

15.Take a tray and coat with ghee.

16.Carefully spread the dry fruits mixture on the tray evenly.

17.Place it in refrigerator for 3 hours.

18.Now bring it to room temperature and slice them into pieces.

19.Store in an air tight container and serve.

P.S:

Instead of making a paste of cashews, almonds, raisins and dates you can also chop them finely and add.

You can include pista, walnut too.

The proportions are purely your choice.

Do not run the mixer continuously when you blend cashews+almonds. They might leave out oil and spoil the entire dish.

Instead of greasing a tray with ghee and spreading the mixture, you can use a butter paper and also roll the same.

You can coat this with desiccated coconut or poopy seeds if you wish.

I removed these from the refrigerator before 3 hours. Hence the shape was not upto the mark. The pictures were clicked on two different days. Sorry for the poor quality of final dish images.
