Biriyani is one of my favourites for three reasons-An one pot meal,loaded with veggies and a royal treat.You can make it in n number of ways and my all time favourite is the way my mother makes.I have always wanted try it like the restaurants and with freshly ground masala powder.Fortunately there was an exclusively TV show on biriyani and I had noted the recipe.I am giving below the recipe for 4 servings with all ingredients whereas the images might not have the same quantity.I skipped few ingredients as my family members prefer a lesser spice version.This recipe is yet another one which can be added to my blog’s purpose.Yes,no whites…Check in detail about it here and let me know if you like the PURPOSE OF MY BLOG. Ingredients:
- Basmati Rice-2 cups(Brown)
- Water-4 cups
- Mixed vegetables-2 cups
- Tomato-1/2(big)
- Red chilly powder-1 tsp
- Coriander powder-1 tsp
- Turmeric powder-A pinch
- Ghee-3 tsp
- Salt-To taste
To dry roast and grind:
- Cinnamon-1/2 inch piece
- Star Anise-1 small
- Bay leaf-1/2
- Pepper corns-2
- Fennel-1/2 tsp(I skipped)
- Cloves-2
To grind into a smooth paste:
- Garlic-10
- Ginger-1 inch piece
- Green chilly-2
- Tomato-1 &1/2
- Mint leaves-1/4 cup
- Coriander leaves-1/2 cup
To temper:
- Bay leaf-1/2
- Green chilly-1
- Cardamom-2
I added carrot,potato ,peas,shallot,onion and capsicum.You can add sweet corn,baby corn,cauli flower,beans,butter beans.
Procedure:
1.Wash and soak brown basmati rice for 30-40 minutes in hot water.
2.Dry roast the ingredients given under “To raost and grind ” and make a fine powder.
3.Make a fine paste out of the ingredients under “To make a paste” and set them aside.
4.In a pressure cooker,add ghee and temper with bay leaf,cardamom and green chilly.
5.Now add the vegetables one after the other and saute them
6.Add the paste and fry till raw smell vanishes.
7.Add the ground masala powder,chilly powder,coriander powder and turmeric powder.
8.Give a quick mix and add salt.
9.Now add the soaked rice after draining the water and stir well.
10.Add water and mix well.
11.Let it pressure cook for three whistles.
12.Carefully fluff it with a fork after the pressure is released.
13.Serve it with any raitha of your choice.

P.S:
Adjust spices as per your taste.
Chop the vegetables into small dice shaped.
The rice might be sticky initially.But once it settles it will turn fluffy as your carefully use a fork.
This can be given to babies after introducing all ingredients separately.
If you are using white basmati rice hopefully 3 glasses of water would do for this soaking period.
Read instructions behind the rice pack to know the right amount of water.
You can use jeera rice too for this.
You can also add half cup of thick coconut milk and 3.5 cups water to make it still richer.
My mother lets it pressure cook for 2 whistles and lets it cook in dum for 5 minutes to enhance flavour.
Ensure the masala texture to be very fine.
Always have a word with your doctor before introducing any new food to your babies.
