Coming to today’s post-I don’t have a great liking towards brinjal and I prefer to take it only with certain types of preparation like Brinjal Gothsu with pongal or Brinjal Gothsu with Idly or Stuffed Brinijal Gravy with rice.I came to know about this dish from my BIL who also dislikes brinjal like me. I made an one pot meal with Brinjal and it came out so well.I would call it a perfect lunch box recipe which has excellent combo of tastes.Come let’s check recipe of VANGI BATH/BRINJAL RICE-A mildly spiced,tangy one pot meal.
Ingredients:
- Brinjal-4 medium sized
- Shallot-5 to 8
- Tamarind-A small ball
- Rice-1 cup
- Water-2 cups
- Salt-to taste
- Turmeric powder-A pinch
To dry roast and powder:
- Channa dhal-1 tbsp
- Coconut-1 tbsp(grated)
- Pepper-1/4 tsp
- Red Chilly-2
- Cumin seeds-1/2 tsp
- Coriander seeds-1/2 tsp
To temper:
- Mustard seeds-1/4 tsp
- Urad dhal-1/4 tsp
- Curry leaves
- Coriander leaves-To garnish
Procedure:
1.Wash and soak rice in water for 10 minutes.
2.Wash brinjal,check for worms and chop into small pieces.Immerse in water to avoid blackening.
3.Dry roast the ingredients under “To dry roast and powder” in low flame and cool them.
3.Make a fine powder out of it.Soak tamarind in warm water
4.In a pressure cooker,add oil and temper with mustard seeds,urad dhal and curry leaves.
5.When they crackle,add shallots,brinjal and cook them till they turn soft.
6.Now add the ground powder and rice.
7.Mix well after adding salt and turmeric powder.
8.Add water+tamarind extract(total of two cups) and close the pressure cooker after
careful stir.
9.Put the whistle and cook for 3 whistles.
10.Once the whistle is released carefully fluff with a fork.
11.Garnish with chopped coriander leaves and serve hot with any raitha or fryums or fries.
P.S:
You can use basmati or jeera rice too.
Adjust water according to the rice used.
Adjust spices as per your taste buds.
You can use white or green brinjal too.
You can add some cashews fried in ghee at the end for more richness.
Brinjal can be given to babies after 8 months.
Brinjal might cause allergies in few babies like skin rashes or difficulty in breathing.
Always have a word with your pediatrician before introducing any new food to your baby.
