Mango Jam Recipe:
MANGOES-I drool when I hear the name,so is my little boy.When the last few mangoes were entering our home I thought of making some mango jam for my son and here is the recipe for you.This recipe is a no white sugar ,no preservative recipe hence it is very safe for your kids.I have already posted beetroot jam and strawberry dates jam recipes.The colour totally depends on the variety of mango used and the type of sugar used.The glaze which you find in beetroot jam is missing here because I have replaced white sugar with palm sugar.LO loves jam and hence I always make jams with various fruits/veggies for him with no sugar and no preservatives.Do give a try and let me know your feedback.
Home made Mango Jam
Ingredients:
- Mango-1 big
- Palm Sugar-1/2 cup(Powdered and sieved)
- Lemon Juice-Few drops
Procedure:
1.Wash the mango and cut into two halves.
2.Scoop the pulp out of it and add to a mixer jar.
3.Give it a quick run and transfer the puree to a thick bottomed pan.
4.Add the palm sugar to in it and give a quick stir.
5.Begin to cook in medium flame with occasional stirring.
6.In some 10-15 minutes the mixture will begin to thicken.
7.At this stage check the consistency to stop cooking.To check consistency use a small plate(almost wet) and add a drop of the jam and slightly tilt the plate.If there is watery outline/trace, continue cooking.There should be no outline/trace.This is the exact jam consistency.You can reduce the flame to low.
8.Add a drop of lemon juice ,stir well ,cook for two minutes in low flame and switch off.
9.Store it in an airtight container after it is completely cool.
Notes:
After 10 minutes of cooking in medium flame keep checking for consistency .
Do not cook for long after adding lemon juice.The jam will turn bitter.
Do not cook in high flame or for longer time as palm sugar might crystallize.
This can used a spread to roti,bread,dosa or as an accompaniment to idly.
This will stay good for 3 months under refrigeration and proper usage.
This can be offered to babies above 1 year.
To offer to babies below one year,choose very sweet mangoes and skip palm sugar or add dates syrup instead of palm sugar
