Oma Podi or Plain Sev:
Oma Podi/Plain Sev/Om Podi is one of the easiest snacks/quickest diwali savoury item which can be made. This is my sisters most favourite so my grandmother, mom, aunt used to make this very often even during non festive seasons. It is mostly made with besan flour/kadala maavu/chick pea flour ,rice flour and ajwain.Few skip rice flour.Hubby wanted me to give it a try this time.So I made it.Believe me it gets done in no time. There is no much of any specific tricks in this.I would prefer such home made snacks to any store bought ones always because we make it and I use only coconut oil to make any such snacks to make it healthy even though they are deep fried.
Ingredients:
- Besan Flour/Kadala maavu-1 cup
- Rice Flour-1/4 cup
- Hot Oil/Butter-2 tbsp
- Water-As needed
- Salt-As per taste
- Ajwain Seeds-2 tsp
- Oil-To fry
Procedure:
1.Measure and keep all the ingredients ready.
2.Dry Roast ajwain/omam and crush it with a mortar pestle and soak in some water.
3. Take all ingredients except oil, water and sieve it well.
4.To this add ajwain water(filter it)/hot oil/butter and knead it to smooth dough(similar to idiyappam).
5.In the mean time heat oil in a pan.
6.Make small portions, add to the sev press and squeeze & move in a circular path and and deep fry in oil.
7.Drain the excess oil and store it in an airtight container.
Notes:
Please be careful while adding water or hot oil to knead.Add little by little ,knead well.
Make omapodi immediately after making the dough. Otherwise, it will be very hard to press it.
If made with coconut oil or gingelly oil the shelf life would be a maximum of a week.
You can add half a tsp of chilli powder too if you wish
