Jam Jam Jammy—Remember these ad guys?Every time when a jam is made at home I remember this tune and song.I even get amazed at myself when I think of having had a great craze for jam/any sweet when I was in school.And think of the change in me now?I have cut down all refined sugars in my cooking and have been used to even skipping sugars totally. Are you wondering why is this mentioned now? It is just to give you all a confidence that any change for a goodness is possible.There was a time when a few kgs of sugar was bought exclusively for me in my home and now I am into strict “no white ingredients” in my cooking mode. There is nothing “IMPOSSIBLE” dear friends 🙂 Today’s recipe is apple jam which I made when two months back.I still have it in my stock and I have carried it with me all along.It has no preservatives and no white sugar added.You can even make without any sugars by adding dates for babies below one year.

Ingredients:

  • Apples-3
  • Beetroot-1/2
  • Palm Sugar/Brown sugar-3/4 cup
  • Lemon Juice-2 drops

Procedure:

1. Measure and keep all ingredients ready.

2.Chop apples and beetroot roughly after washing and peeling the skin.

3. Blend it in a mixer to a smooth paste. Sprinkle water if you are unable to blend it.

4. Add this to a pressure cooker and add the palm sugar.

5.Add half cup of water and mix well for few minutes and pressure cook for 3 whistles.

6.Once the pressure is released open cook the jam for few minutes until it reaches the consistency.To check for the right consistency take a drop and pour it on a plate. If it doesn’t form any traces as shown in the picture, the jam is done.

7.Switch off the flame and add two drops of lemon juice and stir well.

8.Cool and store in an airtight container(sterilized) under refrigeration

Notes:


You can skip adding beetroot because I added only for a natural colour.

You can add some 15-20 deseeded dates instead of sugar if you plan to offer for babies below one year.

Don’t cook in high flame after the pressure is released.

Do not cook in high flame or for a longer time as palm sugar might crystallize.

This can be used a spread to roti, bread, dosa or as an accompaniment to idly.

This will stay good for 3 months under refrigeration and proper usage.

This can be offered to babies above 1 year.

To offer to babies below one year, choose sweet apples +dates and skip palm sugar or add dates syrup instead of palm sugar

Always have a word with your doctor before offering any new food to babies.
