Rava Kesari:
Kesari-The most super quick sweet one can make which I have never made fearing that I wouldn’t be able to get the right consistency. Hubby and my paternal granddad like it so much. My paternal aunt would never come home without a bowl of this even if she visits us every week. Mom makes it in a jiffy and she had never failed. But to attempt this recipe I literally nagged her for a week, pulled hubby inside the kitchen and finally made it. Hopefully, it is perfect.I was questioned by a few friends that how I manage to cook without white ingredients daily. I try to replace with healthy alternatives. But I do include them once in 4 months or 6 months for dishes like Kesari, milk halwa,gulab jamun etc.We don’t make these daily ,right?
Ingredients:
- Sooji/rava-3/4 cup
- Water-1 3/4 cups
- Sugar-1 cup
- Ghee-To cook
- Cashews+raisins-Handful
- Saffron-Few strands.
- Food colour – 2 drops (optional)
1.Measure all ingredients and keep them ready.
2.Soak the saffron strands in a tbsp of warm water.
3.In a pan add 2 tbsp of ghee and roast the nuts and set them aside.
4.In the same pan,retain the remaining ghee.
5.Add rava to this and fry in low flame.
6.In the mean time boil water.
7.When the rava is completely blended with the ghee and roasted ,add the water and mix well without lumps.
8.In 2-5 minutes it would get cooked.Add the saffron water and food colour.
9.When it is completely cooked add sugar and mix well.
10.Add few spoons of ghee and stir continuously.
11.Cook until the mixture separates out of the bowl(Max 5-8 minutes of stirring would do).
12.Add the roasted nuts and serve it warm.
Use very fine rava(bombay rava).
Stir continuously when you add rava in step 5 and water in step 7.
Frying rava in ghee helps in reducing lump formation.
Do not add sugar before the rava is completely cooked.
After adding sugar,it would get dissolved attain a liquid level and then get cooked up to a semi solid level.
Be generous in using ghee.This enhances the taste and ease of stirring.
You can add food colour if you want. I wouldn’t recommend it on a regular basis
This can be offered occasionally to babies above 1 year.
This can be given to babies above one year.
