Broken Wheat Pineapple Kesari or Pineapple Kesari or Wheat Rava Pineapple halwa is a very rich nutritious dessert/sweet .I made some replacements to the usual pineapple kesari made with white sugar/rava .I replaced them with healthy versions like palm sugar and wheat rava. It turned out super yummy and I didn’t even get enough quantity to click a picture.The dish was done some 2 years back and only now I dug my old drafts and brought it live as a post.
Ingredients:
- Broken Wheat-1/2 cup
- Palm candy-1/2 cup
- Pineapple-1/4 cup(chopped finely)
- Ghee-To cook
- Water-1.5 cups
- Raisin & Cashew-To garnish
Procedure:
1.Measure all ingredients and keep them ready.
2.Peel pineapple and chop them finely.Remove the thorny portions.
3.Grind the palm candy ,make it into a powder,sieve it and keep it aside.
3.Take the broken wheat in a pan and dry roast for 2 minutes.
4.Cool it and run in a mixer once in pulse mode. You can skip this step if your broken wheat is small/thin.
5.In the mean time boil water in a pan.
6.After breaking the broken wheat,add in a pan with some ghee.
7.Saute well.When it is completely roasted,add the boiling water.
8.Let it cook in medium flame.
9.When the broken wheat is cooked to 90% add the powdered palm sugar and mix well.
10.Keep cooking with occasional stirring and add the chopped pineapple when the broken wheat is completely cooked.
11.Add the ghee roasted raisins and cashews and cook till it separates out of the pan.
12.Serve it warm
My observations:
Use thin variety broken wheat.
Sieve palm sugar before use to avoid impurities .
You can alternatively pressure cook broken wheat and also make halwa.
This can be stored at room temperature for 3 days and for a week if refrigerated.
Be generous in adding ghee then and there to enhance taste and to ensure smooth stirring.
This can be offered to babies above one year.
Ensure to have introduced each ingredient well in advance and eliminate allergies before trying this.
