Idly Milagai Podi or Idly Podi or Milagai Podi for Idli is a very handy and quick fix for dinner or breakfast. Idli milagai podi goes so well with all varieties of idli/dosa/adai too. This combo of ildi+oil+podi is unbeatable and there are many in the family who would an extra plate of idly for the podi. I somehow have never had a liking for idli milagai podi but hubby and LO loves it. Here is amma’s simply superb version without garlic.I have added the alternations to be made for different other versions. I hope you find them useful.
Idly Milagai Podi Recipe:
Ingredients:
- Red Chilly-1/4 cup
- Urad Dhal-1/2 cup(whole)
- Gram Dhal-1/3 cup
- Sesame Seeds-1/4 cup
- Hing-1 tsp
Procedure:
1. Measure and keep all ingredients ready.
2. In a pan dry roast chillies first. Keep it aside.
3. Now add sesame seeds+ hing and dry roast.
4.Net add gram dhal and urad dal and dry roast them separately.
5. Cool all of these and grind them into a semi coarse powder to make Idly Milagai Podi.
6. Store the Idly Milagai Podi in an airtight container.
My Observations:
You can replace whole white urad dhal with black urad dhal too.
If you want a garlic flavoured Idly Milagai Podi, finely add roasted garlic and blend well.
This stays good for 1 month.
Colour depends on the ingredients used.
Use a minimal amount of chillies if you are making it for babies.
