Peanut Groundnut Sundal:
Sundal is a nutritious Tamilan snack recipe which is made with the cooked legumes, coconut, and some tempering. Peanut Groundnut Sundal is an excellent protein-rich snack for your kids. Sundal has been a regular snack since my school days. Now my LO has joined the league. It was never a Navratri recipe alone. Verkadalai sundal /peanut /groundnut sundal can be given to babies above 6 months without salt and fewer spices.
Peanut Groundnut Sundal:
Ingredients:
- Groundnut(Dry)-1/2 cup
- Coconut-1 tbsp
- Salt-To taste
To temper:
- Oil
- Mustard Seeds-1/4 tsp
- Urad Dhal-1/4 tsp
- Curry Leaves-Handful
- Red Chilly-1
- Hing-A pinch
Peanut Groundnut Sundal
Procedure:
1.Measure all ingredients and keep them ready
2.Soak groundnuts for 4-6 hours and pressure cook them with salt for 3 whistles.
3. When the pressure is released, if still water is present, cook till it completely evaporates. You can also choose to drain the excess water.
4.In a pan, add items mentioned under “To temper” and when it is done, add the cooked groundnut and mix well.
5.Finally, add the coconut grated and switch off after a quick stir
6.Verkadalai Sundal is ready.
I used dried groundnuts, hence soaked for 4-6 hours before cooking.
Add water just to cover the groundnuts while pressure cooking.
