Kuska or Plain Biriyani has always been my favourite ever since I had it in my college canteens and during my friends’ weddings.Being a pure vegetarian this would only be the option for me to choose in a lavish non-vegetarian menu.Mom doesn’t make this as it bit too spicy than the usual level we use at home. My sister was the one who first tried a kuska recipe from here during our last vacation and from then I got glued to it.I just tweaked a bit to adjust to family’s taste and now this has become one of my standard recipes.You can make it with even plain rice or basmati or seeraga samba.Hubby loves Kuska or Plain Biriyani when made with seeraga samba.

Ingredients:
Serves 2
- Basmati Rice/jeeraga Samba Rice-1 cup
- Onion-1 big(Sliced)
- Curd-3 tbsp
- Water-1/2 cup
- Chilly Powder-1/4 Tsp
- Garam Masala Powder-1/2 tsp
To grind into a smooth paste:
- Green Chilly-1
- Ginger-A small piece
- Garlic-7
- Tomato -2 (Medium)
To Temper:
- Bay Leaf-1
- Cardamom-2
- Cinnamon-A stick
- Fennel -1/4 Tsp
- Poppy Seeds-1/4 tsp
- Clove-2
Procedure:
1. Measure and keep all ingredients ready.
2.Soak basmati rice for 30 minutes.If you use seeraga samba rice, soak in warm water for 10-15 minutes after rinsing.
3.Grind the items under “To grind into a smooth paste” and keep it aside.
4.In a pressure cooker, add oil+ghee and heat it.
5.Now add the tempering elements and let it splutter.
6.Add the onions and fry till they turn translucent and add the masala powders and mint+coriander
7.Now add the rice after rinsing and draining the water
8..Measure the paste and add it now and saute well.
9.Mix everything well and add curd+water, salt.
10.Pressure cook for two whistles.
11.When the pressure gets released, fluff with a fork
12.Serve Kuska or Plain Biriyani with any raitha of your choice.
My observations:
The images are from two different attempts of making Kuska or Plain Biriyani.
Alternatively, you can saute finely chopped tomatoes and add instead of blending into a puree.I avoided as hubby dislikes tomato skin in rice.
The right measurement for a fluffy Kuska or Plain Biriyani is a total of 1.5 cups of liquid(be it coconut milk or puree or plain water) for 1 cup rice, soaked for 30 minutes. So kindly don’t alter it.
Adjust spices according to your wish and taste.
Skip salt for babies less than one year of age.
This can be given to babies above six months
Ensure to have introduced all items before and eliminate allergies.
