Eggless Ragi Choco Chip Cake |Eggless Finger Millet Cake

Here comes one more random attempt with millet flour in baking without raising agents. I wanted to check the result of not using baking powder/soda in baking.My cookies were 100% successful.This cake got slightly dunked in.And I believe it is because of not using raising agents or curd. I am looking for experts to share their opinion on this.Here is the story of this bake 🙂 I ended up burning the top of my cup cakes but successfully made this cake with my little one’s help. My boy is so keen about what mommy cooks for him for every meal.He urges me to plan my every meal,every snack of the week well ahead.He has his own choices and he would love to assist me in cooking especially baking. This was planned to be eggless choco chip cup cakes with ragi and flax seeds without raising agents. I accidentally altered the mode and extended the timing with no proper knowledge and burnt the top of cup cakes. So I poured the second part of the batter to a cake pan,LO did the mixing ,garnishing and converted it to tutti fruity cake 🙂 He removed the burnt top of the cup cakes and stored them for this snack box for the coming week. How much should we learn from these kiddos? ! I even forgot the exact measurements as this was made long back. I have given the procedure and other details for both cake and cup cake here. Millets-They have occupied my kitchen to a huge extent. I experiment with them in every possible way from simple/old pongal to baked goodies like cakes/cookies/muffins. This is an recent attempt of me after longing for a spicy lunch on a lazy Saturday. I heard about this Masala Bath of Maharastra and gave a random try. It came out excellent and all of us wanted more. The best part of the recipe is it can be made in a jiffy in a single pan.You know I hate cooking in the kitchen for long hours. Happy New year and belated Pongal wishes folks 🙂 I am back a long vacation. I hope all of you are keeping good health out there.We all love quick bites like vadai /bajji/fritters when they home made. I would like to highlight a point here .Fried Foods are always not unsafe,especially deep fried foods.Deep fried foods when not taken regularly and not cooked in used oil/refined oils is definitely safe when taken in moderation.Trust me ,even ghee fried foods are safe.It is best to use seed oils for regular use if possible cold pressed.Our family have always been using coconut oil and sesame oil only. Masala Vadai/Paruppu Vadai is one of my favourite snacks,that too on a chill evening with cool breeze.You can definitely gobble 2 to 3 with no guilt. Finger Millet Amaranth|Ragi Rajgira Cookies For Kids-Without Raising agents

Yeppieee!!!I finally tried baking a cookies for the first time and it ended up so successfully.And you know what makes it even wonderful ?It is white sugar free/gluten free/raising agents free -Sounds extremely nutritious right?It is made of finger millet+Amaranth flour as main ingredients.This is my first attempt in baking cookies/biscuits at home and it turned out super yummy and a great hit.It is toddler approved and in less than 24 hours more a tray is empty.My little one loved it so much.I was really thinking of various options and recipes to use this flour.I tried adding to dosa/fritters batter.It came out well.But it took me around 2 months to try a baked goodie recipe.I didn’t have enough confidence to give it a try because baking a cookie/baking without raising agents/baking with rajgira flour etc etc and a lot more was new to me.I am so happy that my maiden attempt turned out super healthy and yummy.Before getting into the recipe let’s look upon some facts about amaranth /rajgira. Millets have been a part of our diet since little one turned one.I was initially hesitant about its taste and flavour but after trying I fond them really excellent.They are perfect on health quotient and taste quotient I would say.It doesn’t need much skills too .It is not as difficult to cook as we think .We can just replace it instead of rice and proceed with the regular recipes friends.Don’t panic to try out amazing dishes with millets. Junk Free Snack Box Recipes for kids(School/Day care)

The greatest puzzles to which we never get the right answer would be “What to pack in kids lunch box/snack box?”.We will have a huge decision making process involved where in we need to consider kid’s likes/dislikes ,availability of ingredients,ease of self feeding at school,nutritional demands and a lot more.After thinking of so many of these we need to work on presenting them to kids well and ensuring that they have it with no mess at school/day care and completely finish them.My little boy has the habit of asking me daily for the menu details before taking his school bag.He would be equally interested the previous day to give his own menu too.I have compiled a set of simple snack options which can be a mid morning/ evening snack for kids above 1.5 years . Pav Bhaji

Chaat Foods/ Items- These are the most popular street foods of India.These are one of the most common favourites for many of us.Hope none would stop getting attracted to chaat items.I am no different in that .I love them as occasional treats. I always like pav bhaji more when it comes to my kid as it has a blend of veggies and getting a whole wheat pav bun is comparatively easier than finding whole wheat pooris.
