VEGAN MANGO MUFFINS/EGGLESS MANGO MUFFINS-A muffin recipe with no white ingredients and no milk products-Yes it is vegan. I just can’t believe myself and I can’t hold the recipe to myself. It is definitely worth the try because it just takes half an hour and it is free of all whites like milk,curd,butter,white sugar,maida/wheat flour(A perfect recipe which will fit the purpose of my blogging journey-Read it in detail here).Don’t ask me if I am a VEGAN. I am certainly not. I can’t survive without butter,ghee,buttermilk,paneer,cheese.I totally avoid white/refined flours,sugar,milk,table salt and mostly curd too. GROUNDNUT CASHEW BALLS

Everyone in the family is so fond of groundnuts.We love it as laddu/candy/steamed/roasted/gravy/stir fry/salad. I used to make this laddu when little one was less than two years when I was scared if he would bite groundnut candy(our own kadalai mittai) and chew well. Groundnut is an excellent source of energy,protein and selenium. When we combine groundnut and jaggery it becomes a power house of iron too. I always prefer the traditional candies like groundnut candy/laddu/fried gram ladoo/sesame laddu to any other store bought cookies or candies or biscuits. SATHUMAAVU KOZHUKKATTAI|MULTIGRAIN DUMPLINGS

Hello Friends!

 

How are you all doing? Hot summer and Vacation mood are keeping away from blogging.(I can hear few of you saying “Ahhh!You come with some reasons! :@ ). I just rush and complete cooking in a jiffy and come to the rescue of fan as my kitchen is always burning like a furnace. Hope this summer ends soon and I pray that it shouldn’t affect anyone. Sathumaavu/Health mix/Multigrain flour is one of the most used ingredient in my kitchen. Rava Khicadi|Sooji Khicidi|Rava Upma

Rava/Sooji is a very rare item in my menu usually. Whenever I use it I ensure to load it with veggies or coat it with ghee.I have heard and read that sooji has no much nutrition to it hence I always prefer godhumai(wheat) rava or maize rava to white sooji.I have already posted a recipe of dalia kheer and upma which are the usual recipes which use white rava.I wanted this recipe in my space because sooji recipes are like a must have recipe in a blog space and many love sooji based recipes.Rava Khicidi is one of the common south indian breakfast items.This is the recipe my mother follows and I can have upma only when made this way because I am not a great fan of upma. GHEE FRIED POHA|SWEET FRIED POHA

How many of you crave for a simple munch on or a “karack morak” snack at times? I do at times. I control myself saying snacking is bad most of the times. But when I am out of control I prefer making some instant snacks at home and have few spoons. One such instant quick snack is this recipe. I honestly didn’t know how to name the dish. I just randomly came up with this. Please ping me if you have some suggestions. This is usually made in the vessel which had been used to melt butter in the process of making ghee. Amma does not wash the vessel with the residue. She makes fried poha and then washes it. HOME MADE BUTTER

Hello Folks! Greetings from KitchenKathukutty 🙂 It has been a very long time since I had posted in this space(It was before Navratri). I was away on account of several family and personal commitments and finally back after 5 months. So were you guys missing me?. I hope all of you are in good health and high spirits.Shall we get into today’s recipe? It is a long pending recipe from my side.I had sent this to mylittlemoppet as a guest post few months back and I am posting it here for you. As most of you would know I always prefer home made ingredients and this is my son’s favourite too. Making butter at home might seem tedious at first but I can bet you that you wouldn’t try store bought butter if you start using this. It will just melt down in your mouth.As summer is almost there here burning all of us I would recommend to have a spoonful of butter in empty stomach early in the morning. This will help you beat the heat.  I can hear many of you asking “Won’t butter increase fat content of my body?, Is it not harmful?” Butter is such a super food if taken in moderation.Butter has been used as a healing medicine by our ancestors.Butter is an excellent source of healthy fatty acids and cholesterol.It is a great anti aging agent .When it comes to babies you can include home made butter from six months . Red Rice Puttu|Sigappu Arisi Puttu

It is Navratri season and I hope all of you are having very colourful and delightful celebrations.Mom keeps golu(traditional show casing of dolls) and we used to have all friends and relatives visiting us.We have poojas day and night and most importantly various prasadh 🙂 This puttu recipe is one signature recipe from my mom and I have so far not succeeded in making such a  perfect one. This is the favourite dish of all kids in the family including me and my son.This is generally made with white rice flour and jaggery and mom began making with red rice flour often especially after LO’s arrival. This dish is made traditionally for the puberty function by maternal aunt and served. This can be offered to babies about one year. red rice and jaggery are rich in iron and hence this is so healthy. Instant Masala Bread Uthappam-No Fermentation Required

Instant dosa/uthappam recipes are always welcome in any place especially among young mothers who run behind their families and kids 24/7.I have already posted recipes of instant ragi dosa,instant jowar dosa ,instant wheat dosa,instant wheat ragi dosa,instant multigrain dosa,instant rava dosa,instant vegetable dosa and now adding a super quick recipe of instant bread uthappam with some added masala and veggies.Last weekend we had tried making some bread at home and we had it handy.The bread didn’t turn out so great but I didn’t want to waste it.(It tasted apt but some look and finish issues).So I ended up using that loaf in this recipe. HOME MADE TOMATO SAUCE-No Preservatives added

Yeah! A home made recipe for all kids favourite “TOMATO SAUCE” with no added preservatives which is just finger licking good. Many mommy friends have been asking for this since they were not so comfortable to offering the store bought ones for kids. I just sat up yesterday ,made up some reading and experimented this recipe.I began with finding a recipe which will not require preservatives.Most recipes called for the usage of vinegar which I was not comfortable in using and I didn’t have it with me too. So I went ahead to looking if vinegar is a must add ingredient in sauce.Then I found it is not required.Few references quoted that Ketchup is made of tomatoes,vinegar and whereas sauce is made without vinegar.I happily began deciding on my ingredients and processes and went ahead.
