VEGAN MANGO MUFFINS/EGGLESS MANGO MUFFINS-A muffin recipe with no white ingredients and no milk products-Yes it is vegan. I just can’t believe myself and I can’t hold the recipe to myself. It is definitely worth the try because it just takes half an hour and it is free of all whites like milk, curd, butter, white sugar,maida/wheat flour(A perfect recipe which will fit the purpose of my blogging journey-Read it in detail here).Don’t ask me if I am a VEGAN. I am certainly not. I can’t survive without butter, ghee, buttermilk, paneer, cheese.I totally avoid white/refined flours, sugar, milk, table salt and mostly curd too. I partially avoid white polished rice in our reguar food and substitute with whole grains and millets. Continue reading “VEGAN MANGO MUFFINS/EGGLESS MANGO MUFFINS”

Yes you heard it right-A cake with multigrain flour/health mix/sathumaavu that too 100% eggless.I was never so thrilled and excited so far even when I had cooked first and posted my first recipe.Buying an OTG was a long pending one and I was the sole reason behind dragging it. I was so skeptical about its usage and worth of the purchase.I was constantly doubting in many aspects and finally we bought this two weeks back.It is a 24 L Morphy Richards OTG.I have been reading and learning a lot of baking basics, tips and recipes since then .Ask my friends and you would know how much I had nagged them 😉 With some beforehand experience of making cakes in pressure cooker and as a result of reading a lot from the web,FB groups and books I finally roughly drafted this recipe .The major reference comes from here and FB group OVENDERFUL MOM BAKERS COMMUNITY.I was so sure of baking it healthy without using maida/refined flour/all purpose flour.I have tried cakes with wheat and all millet flours in pressure cooker. Some turned great and few turned out to be a disaster. So with all learnings I gathered all courage to experiment with my OTG .I was so very excited when I tried this and had my finger crossed to check the outcome. Thanks to all wonderful friends who helped me by answering my queries and sharing their tips.I am a very beginning stage of baking and I am trying my best to put in all pointers in this post.I shall keep on improving.Do write to me your tips/suggestions.Here goes the recipe of my trial in my OTG.(Pardon me if I have not done the best) Continue reading “MULTIGRAIN CASHEW CARROT CAKE”

Go through this space and you will know that my words are very true. With no more words I am handing over the space to my beloved friend.THANKS A BUNCH for this recipe and always being supportive dear. The Jingle bells season is here and I am drowned in sweet memories of Christmas Celebrations at school and with my friends. My native(Palayamkottai-Known as Oxford of South India) is also famous for the yummy mouth watering plum cakes/Christmas cakes. We would have them flooding from all our friends a week ahead and most of it will be 100% home made from scratch. Few even prepare the wine used in preparation at home. It just tastes heavenly and it was a bliss. Before wedding my office friends had shared their home made(mom-made) cakes for me and I really miss them now. All these enormous missing and love for cakes made me attempt a cake with no egg no oven and especially no whites(maida/sugar/milk).Yes, I(We-Hubby shared excellent tips and helped me a lot) did it…As most of you would have known that I run this blog with a purpose of avoiding whites in cooking and spreading the habit of healthy eating across.( Check this to know the details of the blog purpose in detail. ) Continue reading “WHOLE GRAIN CAKE-RAGI WHOLE WHEAT EGGLESS COOKER CAKE”
