Sandwich is such a saviour for me.When I blink with no options to make I just blend the available ingredients to make a sandwich and my son just loves it.This was one such random try .I actually planned for a bread pizza but little one didn’t want the sauce on it,so this recipe is an open sandwich.Adding sauce(check out home made sauce recipe here) will make it an exact bread pizza. Sandwiches are excellent options for breakfast/snack/dinner because of the variations we can make and stuff all vegetables we wish to make it healthy/yummy/colourful.
Hello Friends! I am back after 75 days approx. We had a sudden transfer and I was stuck with packing/loading/shifting/unpacking/settling episodes.And finally we are kinda settled at Delhi and I thought it is high time I resume my blogging.I have been missing all of you and my blog.Hope you also had been missing Kitchen Kathukutty. I wish I could back to my routine and stick onto a regular blogging. Fingers crossed.
Now,let’s get onto today’s recipe.It is soya rice or soya bean rice or soy rice. This was made my last year for hubby’s lunch box and only now I am bringing it to this space. I tried this recipe by slightly tweaking the usual Mochai Payaru Kara Curry/Lima Bean Spicy curry recipe. This just popped up when few of my readers were inquiring about uses and benefits of soya bean. Soya bean is the richest legume with the highest protein. I have already posted a soya bean biriyani recipe which is made from fresh red soya beans(Similar to peas,butter beans).This is the dried light brown variety which is used in making soy milk.tofu etc.Please find tofu burji recipe here.You can choose to use any legume in this recipe and just make this quick and nutritious lunch box recipe.It is slightly spicy.
Onion & tomato Thokku along with roti/chapathi/phulkha is an excellent combination and a no fail recipe in our family.This time I tried making chapathi using Autolysis Method which helps in reducing the kneading effort .I can hear you asking what it is… Here we go with the details of this.Long back, post few days of wedding when we had a family discussion during dinner and my father in law was elaborating a quick way he had learnt during his NSS camps and had asked me to give a try whenever possible as it would reduce my efforts. This is what he said to me,add half the amount of warm water to the flour(wheat) by just making deep hollow space in vessel containing wheat flour and just cover up the water with the flour just as we play with sand. Cover and let it for 30 minutes. Give a quick mix/knead and make rotis. I have always seen my in laws doing this but I have never given a thought of doing it.Recently I learnt from my school friend that this is such an easy way make chapathi/roti/phulkha and it is called “AUTOLYSIS” and I gained more confidence as I referred here.Yes…It took me almost 2.5 years to give a try and now I am always following this recipe to make roti.Believe me !The result was a perfect success. It might take you 2 or 3 trials to fix up on the right ratios as the wheat flour each of us use might differ.A few more insights about autolysis method which I read across before trying. Autolysis on a general term refers to destruction of a cell by its own enzymes or in just a word it is “self splitting”.When it comes to baking or kneading dough it means enzymes in the flour (amylase and protease)start breaking down starch and protein in the flour.Ok OK.. Today’s recipe is a very simple but a nutritious power packed side dish for rice. Is is methi dal/methi dal fry/vendhya keerai paruppu kootu. A bowl of hot steaming rice rice, few spoons of ghee and methi dhal fry makes a heavenly combo.Methi Leaves or Fenugreek leaves or Uluva or Vendhya Keerai is an excellent source of iron and moong dhal is an excellent source of protein. So this becomes perfect combo in terms of nutrition too.Even kids fussy about having greens will love this combination. Come let’s get into the recipe.

My love and trials on ONE POT meals never ends.I keep experimenting almost every morning.This channa biriyani came to my mind when I was thinking for doing something other than stir fry or gravy or filling for sandwich with channa.Mom never forgets to include one variety of legume in our daily meal to suffice the daily protein requirement.I also try to follow my mother and always try to include atleast 2 or 3 portions of pulses in daily meal.My son loves all legumes since they are easy to pick and munch on.This simple yet rich dish is one of his favourites.
- Basmati rice-1 cup
- Channa/Chickpeas-3/4 cup
- Thick coconut milk-3/4 cup
- Water-3/4 cup
- Garam masala-1/2 tsp
- Turmeric powder-A pinch
- Salt-To taste
- Ghee -To cook
To grind into a smooth paste:
- Tomato-1 medium sized
- Coconut grated-1 tbsp
- Mint leaves-8
- Coriander leaves-10
- Ginger-A small piece
- Green chilly-2
- Bay leaf-1 leaf
- Cinnamon-A small piece
- Fennel seeds-1/4 tsp
1.Soak Channa/chickpeas overnight after thoroughly washing in water.
2.Rinse and soak rice for 30 minutes in normal water.
3.Pressure cook soaked Channa for 3 whistles.Ensure that they don’t turn mushy.
4.Make a smooth paste out of all ingredients under “To grind into a smooth paste” and keep it aside.
5.In a pressure cooker,add two tbsp of ghee.Add all tempering elements.
6.Now add the paste and fry until raw smell vanishes.
7.Rinse rice well and add the cooked Channa and rice to this.
8.Now add turmeric powder,garam masala and salt and give a quick stir.
9.Add water and coconut milk and cook for three whistles.
10.When the pressure is released carefully fluff it with a fork.
11.Serve it with any raitha of your choice.
You can use brown basmati rice too in this recipe.The water+coconut milk required would be 3 cups for 1 cup of rice after soaking in warm water for 40 minutes.
I prefer to pre cook channa to ensure softness.But do take care while cooking.It shouldn’t get mashed.
Introduce channa separately to your baby before trying this recipe.
Adjust spices as per your taste.
Always consult your pediatrician before introducing any new food to babies.

Biriyani is one of my favourites for three reasons-An one pot meal,loaded with veggies and a royal treat.You can make it in n number of ways and my all time favourite is the way my mother makes.I have always wanted try it like the restaurants and with freshly ground masala powder.Fortunately there was an exclusively TV show on biriyani and I had noted the recipe.I am giving below the recipe for 4 servings with all ingredients whereas the images might not have the same quantity.I skipped few ingredients as my family members prefer a lesser spice version.This recipe is yet another one which can be added to my blog’s purpose.Yes,no whites…Check in detail about it here and let me know if you like the PURPOSE OF MY BLOG.
