KAMBU GODHUMAI IDIYAPPAM/PEARL MILLET WHEAT STRING HOPPERS

String Hoppers/Idiyappam is an Indian version of noodles,to be precise south-Indian version of noodles.My boy loves it and he calls it as noodles and can have it even without side dish. This is one of the best breakfast foods I would say because it is steamed.It is an excellent choice for all ages from 6 months to 60 years.Mom makes it in the traditional way using the big uruli.You can find that process here . It gives you the perfect ,very soft string hoppers. Here is an instant method too for this generation. It is comparatively easy and definitely tasty too.You can pair it with plain milk/coconut milk/ghee+coconut/sothi/kadala curry/veg.kurma or any thick gravies.Mom makes a variety of sevai like lemon sevai,tomato sevai etc.So the variations you can give to this simple dish is endless.I attempted making the same with all millet flour and one such recipe is what I am presenting to you today. MULTIGRAIN CASHEW CARROT CAKE

Yes you heard it right-A cake with multigrain flour/health mix/sathumaavu that too 100% eggless.I was never so thrilled and excited so far even when I had cooked first and posted my first recipe.Buying an OTG was a long pending one and I was the sole reason behind dragging it. I was so skeptical about its usage and worth of the purchase.I was constantly doubting in many aspects and finally we bought this two weeks back.It is a 24 L Morphy Richards OTG.I have been reading and learning a lot of baking basics,tips and recipes since then .Ask my friends and you would know how much I had nagged them 😉 With some beforehand experience of making cakes in pressure cooker and as a result of reading a lot from the web,FB groups and books I finally roughly drafted this recipe .The major reference comes from here and FB group OVENDERFUL  MOM BAKERS COMMUNITY.I was so sure of baking it healthy without using maida/refined flour/all purpose flour.I have tried cakes with wheat and all millet flours in pressure cooker. SAAMAI/LITTLE MILLET KOZHUKATTAI

Dear friends!How was Kirshna Jeyanthi celebrations?What was your menu?If you have tried any recipe from my space,kindly share the picture with me.I will be happy to upload in my page.The upcoming posts in my blog for the next week would be what I had prepared for yesterday’s pooja.I just made few trials by nagging mommy over phone.It was definitely a decent output I would say for my first trial.I hope all of you had a great gala time with family.The recipe for the day is “MILLET KOZHUKKATTAI”.Kozhukkattai is a south Indian steamed food,similar to momos made with rice/wheat/millets.Even the modaks made for Ganesh Chaturthi are called Kozhukkattai.We can make innumerable varieties by creating with stuffing/without stuffing,altering method of preparation,altering the base flour/millet.It is an ideal breakfast/dinner and certain types are super yummy snacks.The following method is one traditional recipe from my family and I have made it super healthy by adding millet.To know more about millets and read millet recipes refer here . You can use little/barnyard/foxtail or kodo millet in this recipe.The below images are from two different days,hence there may be differences.This can be offered to babies above 8 months after trying out each ingredient individually and ensuring no allergy. Vanakkam… Namaste..Hello… How are you all? Did you miss my posts guys? Here I come with a super quick and extremely nutritious recipe that needs just 20 minutes and two ingredients.You can serve this for all age group of family members from six months to any age group.You can make any variations with this recipe. Any millet flour(jowar or bajra or sorghum or any) can be used instead of ragi/finger millet flour and any rice flour can be used instead of wheat flour. While introducing this to babies ensure you have tried each of them individually and confirmed no allergy for each ingredient in your baby. INSTANT MULTIGRAIN DOSA|SATHUMAAVU DOSAI

Sathu Maavu/Multigrain Health Mix/Home made cerelac is one regular food in my daily routine. I begin my mornings with this drink and I prefer making roti or dosa twice a week with this so that it gets included in my little one’s diet too. I somehow have not experimented giving him this as a porridge to him because it is always recommended to stop offering porridges as regular meals above 8 months for babies.This dosa recipe was an instant try and it really turned out good in taste.You can realise the struggle I had in making perfect dosa with the images. Yeah.. Some extra care and patience is required to make this dosa without tearing into pieces.You shall definitely master the skill on your second trial itself for sure.This recipe will be an excellent choice in terms of nutrition and less effort.There is no need to grind or ferment batter to make this dosa.I kindly request you to please read the P.S section for more details. Barnyard millet/Jhangora/Kuthiraivaali sweet pongal

I am happily witnessing PONGAL/MAKAR SANKRANTHI preparations all around and I wanted to give a healthy version of pongal which is definitely a ROYAL treat.This is my mother’s recipe and I just love it. EGGLESS RAGI COOKIES-A NO SUGAR RECIPE

This is a guest post from Mrs.Archana Karthick who has already written a guest post in mushroom category.She is an awesome cook who concentrates on healthy cooking and comes out with excellent ideas especially for toddlers.Thank you dear for such a lovely add on to my blog.This is yet another healthy baking recipe with no sugar and no maida after my whole grain cake recipe.

Ingredients:

  • Ragi Flour-1 cup
  • Palm Sugar-1/2 cup
  • Butter-1/2 to 3/4 cup
  • Vanilla essence or cardamom powder-1/4 tsp
  • Cashews-10-15
  • Milk-<50 ml(Optional)

Procedure:

1.Get all the ingredients ready and pre heat oven for 180 degrees for 10 minutes.

2.Dry roast the ragi flour in medium flame until aroma arises.

3.Cool the roasted flour.

4.In a mixing bowl,add the ragi flour ,palm sugar(powdered and sieved),butter,cashews and vanilla essence.

5.Mix them well to form a dough in the consistency shown in below pic.You can add few drops of milk if you are not attaining the required consistency.

6.Grease a tray with butter and set it aside.

7.Take small portions of the dough and flatten on your palms to cookie shape and flatten it using a roller pin and cut using cookie moulds.

8.Place on the tray and allow to bake in oven for 18 to 20 minutes at 180 degrees.

9.Check for completeness using a tooth pick.

10.Remove the cookies from the tray and cool them.

11.Store it in an airtight container.

P.S:

If you don’t get the dough consistency use milk.

This stays good for 5 days if milk in not added.

Keep a check after 15 minutes.

Do not over bake as they might turn hard or get burnt.

If you make a thin cookie the timing might even reduce.

WHOLE GRAIN CAKE-RAGI WHOLE WHEAT EGGLESS COOKER CAKE

The Jingle bells season is here and I am drowned in sweet memories of Christmas Celebrations at school and with my friends. My native(Palayamkottai-Known as Oxford of South India) is also famous for the yummy mouth watering plum cakes/Christmas cakes.We would have them flooding from all our friends a week ahead and most of it will be 100% home made from scratch. Few even prepare the wine used in preparation at home. It just tastes heavenly and it was a bliss.Before wedding my office friends had shared their home made(mom-made) cakes for me and I really miss them now. Chola dosai|Jowar Dosa|Sorghum Dosa

When you get super bored of usual breakfast and dinner recipes, you can make some quick instant dosa like wheat dosa,ragi dosa and here is another healthy instant dosa of sorghum/jowar/cholam. You can either have these flours prepared at home and choose to buy organic flours. I generally don’t opt for instant menus as most of them don’t happen to be healthy. But when it comes to these recipes,they are super power houses of nutrition. I have always loved to include millets in my recipes and do read my detailed insight on millet with recipes here.

Ingredients:

  • Jowar/Sorghum Flour/Chola maavu-1 cup
  • Salt-To taste
  • Oil-To grease
  • Onion-1/2 cup(finely chopped)
  • Cashews-5
  • Cumin seeds-1/4 tsp
  • Green Chilly-1(chopped)

Procedure:

1. Add the flour in a vessel and mix well by adding water and salt.

2.Add chopped onion,cumin seeds,cashews and green chilly.

3.Mix well and make the batter slightly flowing in consistency

4.Leave it aside for 20 minutes(Optional).

5.Grease the dosa pan and spread the batter.

Chola dosa

6.Close the dosa with the lid and cook well.

7.Flip sides and cook the other side.

8.Repeat the same for the remaining batter.

9. Serve it hot with any chutney.

P.S:

Be careful while adding water.

Don’t make it too runny. The dosa might not turn well.

I skipped adding green chilly.

This cholam is not the corn flour we use. The millet image is in the top most picture.

Millets for babies is again a debated topic. Few offer it as early as 6 to 8 months while few recommend to delay till 1 year.  But any millet needs perfect processing and complete cooking for digestion.

Always have a word with your pediatrician before introducing any new food.
