This is my 301 st post on blog.What an amazing and blessed journey it has been!Almost three years of blogging,lots of friends/well wishers/supporters/followers ,several hours of hard-work,tons of experiences ,bunch of lessons and zero monetary benefits.This blog is a brain child of beloved hubby.It all started when he was guilty of having me away from my most lovable job for umpteen reasons . He pushed me to give a start. I didn’t have a clue what this is all about.I just recorded all recipes I knew with all my knowledge on healthy eating.When I look back the images I posted initially I feel awful today but I am really happy about the learnings. Slowly I incorporated more healthy baby foods as little one was growing along and started focusing on no white cooking which had been the norm of my cooking since inception.This gradually took me to people and there are no words to describe my joy when I received notes from parents/people saying “It was you who transformed our child’s eating routine”,”Kalyani,Thanks for being an inspiration to live healthy without compromising on taste”,”I owe a lot for making my baby’s weaning smooth”.”We miss your healthy recipes”.These aren’t just words.They are real feathers on my crown which I can proudly carry and treat as a blessing.The travel was not smooth.It was a bed roses with too many thorns than petals.Lots of barriers(personal/technical/mental/physical) came along. With the love,motivation and encouragement of family,friends and supporters here I stand feeling not happy or proud or accomplished but blessed.Yes truly blessed.THANKS is the least I can say.But Millions of thanks and tons of love to each person who has been a constant source of positive energy .I bow down to God and each of you. Masala Rice|Masala Baath|Masala Sadham|Spiced Rice

This is an recent attempt of me after longing for a spicy lunch on a lazy Saturday. I heard about this Masala Bath of Maharastra and gave a random try. It came out excellent and all of us wanted more. The best part of the recipe is it can be made in a jiffy in a single pan.You know I hate cooking in the kitchen for long hours. BisiBeleBath/Sambhar Sadham

Our Sundays won’t be complete without a new trial of a recipe.This week I thought of making bisibelebath-a traditional recipe from Karnataka fused with our own sambhar sadham.I have already posted a recipe of sambhar sadham which is amma’s signature dish.I was actually thinking bisibelebath and sambhar sadham mean the same dish.But it is not so.Authentic Bisibelebath has a special spice powder and doesn’t have any vegetables added to it.So here goes my fusion recipe.I was not sure of the outcome until we had it.This was an experiment based on the recipes watched in TV and tasted in restaurants.The result was amazing. SOY BEAN RICE|SOYA BEAN RICE

Hello Friends! I am back  after 75 days approx. We had a sudden transfer and I was stuck with packing/loading/shifting/unpacking/settling episodes.And finally we are kinda settled at Delhi and I thought it is high time I resume my blogging.I have been missing all of you and my blog.Hope you also had been missing Kitchen Kathukutty. I wish I could back to my routine and stick onto a regular blogging. Fingers crossed.

Now,let’s get onto today’s recipe.It is soya rice or soya bean rice or soy rice. This was made my last year for hubby’s lunch box and only now I am bringing it to this space. I tried this recipe by slightly tweaking the usual Mochai Payaru Kara Curry/Lima Bean Spicy curry recipe. This just popped up when few of my readers were inquiring about uses and benefits of soya bean. Soya bean is the richest legume with the highest protein. I have already posted a soya bean biriyani recipe which is made from fresh red soya beans(Similar to peas,butter beans).This is the dried light brown variety which is used in making soy milk.tofu etc.Please find tofu burji recipe here.You can choose to use any legume in this recipe and just make this quick and nutritious lunch box recipe.It is slightly spicy.

TOMATO PEAS PULAO

Thinking to what to pack for lunch is one of the very tough tasks for me in the recent days. Early in the morning , the chef in me makes many new combinations for my best half to ensure I pack him a different meal and also a healthy meal. This tomato peas pulao is one such early morning trial I made and it turned out so great. Channa/Chickpeas Biriyani

My love and trials on ONE POT meals never ends.I keep experimenting almost every morning.This channa biriyani came to my mind when I was thinking for doing something other than stir fry or gravy or filling for sandwich with channa.Mom never forgets to include one variety of legume in our daily meal to suffice the daily protein requirement.I also try to follow my mother and always try to include atleast 2 or 3 portions of pulses in daily meal.My son loves all legumes since they are easy to pick and munch on.This simple yet  rich dish is one of his favourites.

CHICK PEAS PULAO OR CHANNA BIRIYANI

Ingredients:

  • Basmati rice-1 cup
  • Channa/Chickpeas-3/4 cup
  • Thick coconut milk-3/4 cup
  • Water-3/4 cup
  • Garam masala-1/2 tsp
  • Turmeric powder-A pinch
  • Salt-To taste
  • Ghee -To cook

To grind into a smooth paste:

  • Tomato-1 medium sized
  • Coconut grated-1 tbsp
  • Mint leaves-8
  • Coriander leaves-10
  • Ginger-A small piece
  • Garlic-7
  • Green chilly-2
  • Shallots-4

To temper:

  • Bay leaf-1 leaf
  • Cinnamon-A small piece
  • Fennel seeds-1/4 tsp
  • Clove-1

CHICK PEAS PULAO OR CHANNA BIRIYANI

Procedure:

1.Soak Channa/chickpeas overnight after thoroughly washing in water.

2.Rinse and soak rice for 30 minutes in normal water.

3.Pressure cook soaked Channa for 3 whistles.Ensure that they don’t turn mushy.

4.Make a smooth paste out of all ingredients under “To grind into a smooth paste” and keep it aside.

5.In a pressure cooker,add two tbsp of ghee.Add all tempering elements.

6.Now add the paste and fry until raw smell vanishes.

7.Rinse rice well and add the cooked Channa and rice to this.

8.Now add turmeric powder,garam masala and salt and give a quick stir.

9.Add water and coconut milk and cook for three whistles.

10.When the pressure is released carefully fluff it with a fork.

11.Serve it with any raitha of your choice.

P.S:

You can use brown basmati rice too in this recipe.The water+coconut milk required would be 3 cups for 1 cup of rice after soaking in warm water for 40 minutes.

I prefer to pre cook channa to ensure softness.But do take care while cooking.It shouldn’t get mashed.

Introduce channa separately to your baby before trying this recipe.

Adjust spices as per your taste.

Always consult your pediatrician before introducing any new food to babies.

VEGETABLE BIRIYANI-(With brown rice & fresh masala)

Biriyani is one of my favourites for three reasons-An one pot meal,loaded with veggies and a royal treat.You can make it in n number of ways and my all time favourite is the way my mother makes.I have always wanted try it like the restaurants and with freshly ground masala powder.Fortunately there was an exclusively TV show on biriyani and I had noted the recipe.I am giving below the recipe for 4 servings with all ingredients whereas the images might not have the same quantity.I skipped few ingredients as my family members prefer a lesser spice version.This recipe is yet another one which can be added to my blog’s purpose.Yes,no whites…Check in detail about it here and let me know if you like the PURPOSE OF MY BLOG. CARROT BATH|CARROT RICE

When you are super bored of cooking and you still want to make your lunch nutritious you can go ahead with one pot meals. Here is one yummy,sweet and spicy version of one pot meal and it doesn’t require much time for cooking. This can be an easy way to include veggies to your toddlers menu. They will love it because of the colours and taste of carrot. If your baby is weaned by BLW method I am sure you will get an empty bowl back. My aunt had made this when we visited them 2 months back and we were totally loving it.

Ingredients:

  • Carrot-1.5 cups
  • Basmati Rice-1 cup
  • Onion-1/2 cup(Sliced)
  • Capsicum-1/4 cup(sliced)
  • GGG paste-1 tbsp
  • Ghee-To cook
  • Coriander leaves-To garnish
  • Cashew nut-7
  • Salt-To taste

(GGG -Ginger Garlic Green chilly)

Carrot Bath

Procedure:

1.Wash and soak basmati rice for 20 minutes in luke warm water.

2.Add 1.5 cups of water and pressure cook the rice or open cook the rice and strain excess water.

3.Fluff the rice with a fork and set it aside.

4.In a pan,add ghee and roast cashews and set them aside.

5.In the same pan,add sliced onions,capsicum,grated carrots and GGG paste and saute well

6.Keep tossing until onions turn golden brown.

7.Now add the rice and mix well.

8.Add salt to taste.

9.Garnish with coriander leaves and cashews.

10.A rich but simple to cook carrot bath awaits to tangle in your tongues 🙂


P.S:

This is very suitable for kids who love colours in their foods.

Take care to fluff the rice well with a fork and ensure they don’t stick together.

You can also replace carrot by beet root.

You can use the normal rice instead of basmati rice too.

Ensure not to stir many times after step 7. Otherwise the rice will turn mushy.

This is suitable for babies above 9 months of age. Avoid salt and replace basmati rice with usual rice if required.

You can serve with any raitha of your choice.

Adjust the spice level by adding or reducing the GGG paste.

You can also add other seasoning elements like aniseeds,cinnamon,baby leaf and clove.
