Today’s recipe is based on our super millet “Kelvaragu/Nachini/Finger Millet/Ragi and it is a spicy kozhukkattai.It is a healthy dish for snack box or dinner. EGGLESS RAGI COOKIES-A NO SUGAR RECIPE

Ingredients:

  • Ragi Flour-1 cup
  • Palm Sugar-1/2 cup
  • Butter-1/2 to 3/4 cup
  • Vanilla essence or cardamom powder-1/4 tsp
  • Cashews-10-15
  • Milk-<50 ml(Optional)

Procedure:

1.Get all the ingredients ready and pre heat oven for 180 degrees for 10 minutes.

2.Dry roast the ragi flour in medium flame until aroma arises.

3.Cool the roasted flour.

4.In a mixing bowl,add the ragi flour ,palm sugar(powdered and sieved),butter,cashews and vanilla essence.

5.Mix them well to form a dough in the consistency shown in below pic.You can add few drops of milk if you are not attaining the required consistency.

6.Grease a tray with butter and set it aside.

7.Take small portions of the dough and flatten on your palms to cookie shape and flatten it using a roller pin and cut using cookie moulds.

8.Place on the tray and allow to bake in oven for 18 to 20 minutes at 180 degrees.

9.Check for completeness using a tooth pick.

10.Remove the cookies from the tray and cool them.

11.Store it in an airtight container.

P.S:

If you don’t get the dough consistency use milk.

This stays good for 5 days if milk in not added.

Keep a check after 15 minutes.

Do not over bake as they might turn hard or get burnt.

If you make a thin cookie the timing might even reduce.

RAGI PANCAKE|FINGER MILLET PANCAKE-NO EGG NO COOKING SODA

Ragi/Finger millet or  கேழ்வரகு is one of the miracle grains/millets and it is an abundant source of nutrition. It is one of the first foods for babies and also a very traditional grain of India. I have been incorporating millets in my cooking once or twice in a week and you can find my detailed writeup on MILLETS and various recipes of millets here. This pancake idea has been in my mind for a long time and I was hunting for pancake recipes without COOKING SODA & EGG. I found few alternatives for them and I am trying those. In the meantime yesterday evening my mother in law’s recipe of sweet ragi roti flashed my mind. I made small modifications and made a very quick INDO AMERICAN “ராகி/ கேழ்வரகு pancake”. It tasted yummm and it came out so soft melted in our mouths. The best part of this recipe is it is so instant and quick. All you need is 10 minutes and your super healthy yummy pancake is ready. This can be your breakfast/dinner/snack. RAGI CARROT HALWA/FINGER MILLET CARROT HALWA

I am so excited about this recipe. You know why? This is a recipe which I tried randomly replacing the whites(milk and sugar) with our own traditional and extremely nutritious ragi and palm sugar.I have been avoiding these whites in my cooking since I started my kitchen entry and the purpose of my blog is also to spread the word of healthy cooking and eating. You can find them here. I have received many queries on how to cook avoiding these. Here is an evident proof recipe. You won’t believe the taste of this recipe. It bet the original carrot halwa and stood far ahead in flavor and taste. This is ideal for babies from 6 months. Skip dry fruits and palm sugar for babies below 1 year. Ragi milk is extremely nutritious and it tastes yummmm with palm sugar. It can beat any pudding in taste. I prefer making ragi porridge with whole ragi milk for my son as it helped him some healthy weight gain.

Ingredients:

  • Carrot-1.5 cups(Grated)
  • Ragi-1 cup
  • Palm sugar-1 cup(Powdered)
  • Ghee-2 tbsp
  • Cashews,raisins,almonds-To garnish

Procedure:

1.Wash and soak ragi for 3 hours in hot water.

2.Wash and peel carrot skin.

3.Grate carrots and set aside.

4.Drain water from soaked ragi and add it to an blender.

5.Add few spoons of water and extract milk.

6.Add the powdered palm sugar to this milk and filter thrice.

7.Add ghee in a pan and roast the dry fruits.

8.When they turn golden brown,set them aside.

9.In the same pan add the carrots, and saute well in medium flame.

10.Saute until raw smell of carrot vanishes.

11.Now add the ragi milk and keep stirring.

12.Keep stirring until the milk thickens and the carrot gets mixed well.

14.Switch off and add dry fruits and serve.

P.S:

Adjust palm sugar level based on your sweetness.

The colour depends on the variety of palm sugar.
