Eggless Whole Wheat Oats Banana Cake

I discovered my love for cake making just a few days ago. I tried making an eggless chocolate cake in the pressure cooker and to my surprise, it came out well in the very first time. I was extremely thrilled to see a nicely integrated, super soft and spongy cake inside the cooker and that was the moment, I guess I fell in love with cake making. I take this space to appreciate the various amazing food bloggers who give detailed recipes and very useful trouble shooting ideas as I refer these food blogs and websites even for everyday cooking.

Eggless Whole Wheat Oats Banana Cake
Ingredients :
  • Oats – Finely powdered – 3/4 cup
  • Wheat flour – 3/4 cup
  • Milk – 3/4 cup
  • Banana – 2 nos (over ripped will be perfect)
  • Organic Sugar (Naatu sarkarai) – 3/4 cup
  • Dates – 1/2 cup or (8-10 nos)
  • Baking soda  – 1 Table spoon
  • Salt – 1 pinch
  • Chocolate essence – 3 drops
  • Lime juice – 1 table spoon
  • Raisins –  10 – 15 nos
  • Pistachios – 8- 10 nos
  • Almonds – 6- 8 nos
  • Butter – 1 table spoon

For topping ( Optional)

  • Chocolate syrup – 20 ml
  • Color sprinkles- As required
  • Chocolate chips -As required
Eggless Whole Wheat Oats Banana Cake
 Procedure:
1. Mash the bananas well.
2.. In a bowl, add oats , wheat flour , milk , mashed bananas and organic sugar .
3. Mix well.
4. Remove the seeds from the dates and add mash it well. ( I kept the dates in microwave oven for few seconds so that it becomes mushy and now it will be easy to mash ).
5. Add the dates to the bowl , add the essence , baking soda and salt.
6.Add the raisins, almonds and the pistachios

7. Finally add a spoon of lime juice
8. Mix well using a spoon or blender. Make sure there are no lumps formed.
9. Take a heavy bottomed large size vessel. (But should fit inside the cooker)
10.Grease the bottom and sides of this vessel with butter.
11. Now the mixture in the bowl should be transferred to this heavy bottomed vessel.
12. Fill the cooker with 1.5 litres of water. Remove the casket and the weight.
13. Place this vessel in the cooker and close it.

14. Keep in medium flame and cook for 40 minutes.
15. After 40 minutes open the lid and check if the cake is done,using a tooth pick.
16. If so, without disturbing, allow it to cool for 10 minutes.
 17. After 10 minutes, scrape the sides using a knife.
18. Invert the vessel and smooth side of the cake will be on top.
19. You can top this up by pouring generous amount of chocolate syrup or any flavor of your choice.
20. I also added color sprinkles and chocolate chips. If you want to stick to healthier version, you can stop at step 18.

For people who wish to know more tips on making the cake in pressure cooker please refer here
While making cakes in the cooker,always remove whistle and casket.
You can either add 2 cups of salt/sand or 1.5 litres of water to the bottom of cooker to give the pre heat effect and save the cooker from wear and tear.
Ishwarya has used 7 litre capacity cooker and hence 1.5 litres of water.
Use a heavy bottomed vessel if you follow this method so that the vessel stays stable(slightly floating) in water.
You can replace wheat with ragi/bajra/jowar or all purpose flour, organic sugar with ordinary sugar,oats with rice flakes/poha, corn flakes, ragi flakes or any grain-based flakes.
Pour the batter into the vessel very patiently and assure there are no lumps formed.

  1. can v use cocoa powder instead of chocolate essence? Hw long can d cake b stored? Dont steamed cakes get spoilt faster than baked ones ?
