Peanut Chikki/Kadalai Mittai:
Hello Friends! I hope all of you all keeping good. People in North India please take extra care of yourself because of the smoggy winter prevalent. There were no posts from me for the past two days because of the horrible pollution which has bombarded us. It was a real shock to the first timer like us and we are slowly finding ways and means to tackle it. I had severe eye irritation because of it irrespective of staying indoors. It is definitely not so simple as most people think. This is an alarming situation. I shall write a separate post on this because I would write several pages if I commence. Coming to today’s recipe, it is our own traditions and the most healthy snack “Kadalai Mittai/Peanut Bar/Groundnut Chikki/Groundnut Candy”.This is one of the recipes which I had been miserably failing several times and this time hubby made it perfectly. Yeah! You can call this a guest post from Kitchen King(H/O Kitchen Kathukutty). We have so keenly tried on this because we had a tough time to pick up a pure groundnut candy for our kid. By pure what do I mean? I mean the ingredients should be only “Jaggery+Water+Cardamom+Groundnut” and no glucose syrup or other artificial/refined sweeteners. You may ask me why so much of stress on this.It is because it is our regular snack. We don’t send packed snack/ready made food as our son’s snack. Peanuts/Groundnuts are so rich in protein and combining it with jaggery makes it a superfood. To know more about the benefits of groundnut refer here
Ingredients:
- Groundnut-1 cup
- Jaggery-1/2 cup
- Cardamom Powder-A pinch(Optional)
- Water-1/4 cup
Procedure:
1.Measure and keep all ingredients ready.
2. In a pan , dry roast groundnut until the skin begins to peel.
3. Cool them and peel the skin.
4.Grease a plate with oil and keep it ready.
5.In a pan add jaggery and add less than 1/4 cup to dissolve the jaggery.
6. Let it melt in low flame.
7. Heat for 5 minutes in low flame and keep checking the consistency.To check consistency add a drop of jaggery syrup to some water,initially it will dissolve , next it will stand as a layer and next it would gather into a thick ball.
8. At this stage add the groundnut immediately and give a quick stir in low flame.
9.When it is completely mixed well add this to the greased plate and flatten well.
10.Cut into pieces when it is hot.
11. Transfer to an airtight container when it is cooled.
12.Peanut Chikki/Kadalai Mittai stays well for a week to 10 days.
Notes:
The colour depends upon the jaggery.
Don’t over roast the groundnut since it will end up in creating an oily smell.
The consistency of the jaggery syrup is very important to get the perfect chikki. So cook in low flame and don’t let the syrup boil.
The syrup would thicken and turn glossy. Start checking for thick ball consistency from then.
If it boils and thickens it would make the candy non-chew-able.
This can be offered to babies above one year.
