Kuzha Puttu is a very common breakfast dish from Kerala. It is a truly delectable and filling dish served with payaru curry or kadalai curry, nendran banana, sugar or jaggery and papad. You can make several varieties of puttu with different flours and serve with different combinations. It is a complete and wholesome meal and the taste is so good.Kuzha Puttu is slightly different from the earlier red rice puttu I had shared.Kuzha puttu is made with a puttu maker(Click to buy). The puttu maker comes in different variants (An attachment to the pressure cooker or complete steamer type or cherattai type or bamboo types).Puttu is a dish which is made with flour+water mixture steamed well. As this Kuzha Puttu is made with tube-shaped maker it is called as “Kuzha/Kuzhal Puttu”.My aunt prepares this for me whenever I visit her. The below recipe is from her kitchen and I shot these 2 years ago. She has made it with matta rice flour. You can make the kuzha puttu with any rice flour/millet flour.I have given the details of how to prepare the flour at the end.
Kuzha Puttu Recipe:
Ingredients:
- Rice Flour-1 cup
- Salt-To Taste
- Grated Coconut-3 tbsp
- Water
Kuzha Puttu Recipe:
Procedure:
1. Measure and Keep the ingredients ready.
2. Boil water until it becomes warm.
3. Add salt and mix well.
4. Sprinkle water to the flour and keep mixing.
5. The flour should slightly be wet and when you hold with your palms it must get held and fall apart when dropped. This is the consistency required. So add water accordingly.
6. In the puttu maker ,add a layer of coconut grated,then the flour and then coconut and flour and coconut.
7. Steam cook for 10-15 minutes.
8. The stick attached will come out clean when the puttu is completely cooked.
9. Serve it warm with Nendran Banana and Kadalai Curry
P.S:
To prepare the rice flour at home, soak rice for 3 hours.
Drain water and dry it on a cloth.
When it is dry(a slight dampness should still be present), grind into a fine powder in a mixer.
Sieve, dry roast and use for making puttu.
For millets, the flour can be used as such or you can buy puttu flour available in the markets.
Babies above 8 months can have this.
Ensure to have introduced all items before and eliminate allergies.
Skip salt for babies below one year.
