Hello Friends! How was your long weekend? We had an awesome trip to ravishing Rajasthan and enjoyed a totally new type of holiday with camel safari at the dunes, parasailing, quad bike race and a lot more. Definitely a lifetime experience it was. Todays’ recipe is a guest post. This is from the same contest I had mentioned earlier. It is from the group “Roasts n Grinds”. We had called for healthy recipes with tofu/mushroom/soya and healthy baking recipes. The recipe is Mushroom Kola Urundai/Stuffed Mushroom Balls by Bhuvana Selvaraj. Mushroom Kola Urundai Recipe:
Ingredients:
- Mushroom -250 gms
- Potato: 1/4 kg
- Gram Flour- 100 gm
- Chilli powder – 2 spoon
- Turmeric powder – 1 spoon
- Garam masala: 1 spoon
- Salt: 4 pinches
- Breadcrumbs: 1 cup
- Oil: 1/4 Ltr.
- Whole Wheat Flour- 1 cup

Procedure:
1: Clean & Wash the mushroom
2: Cut them into 4 pieces gently.
3: Take the gram flour and add water to make the batter
4: Dip the mushrooms in the batter
5: Heat oil in the pan. Fry the coated mushrooms into the oil. Let them fry for 2 minutes or till golden brown
6: Boil the potatoes
7: Mash the potatoes with a fork without lumps. Add salt, garam masala, chilli powder & turmeric powder
8: Add the flour and mash thoroughly
9: Make lemon size balls and flatten it slightly.
10. Insert the fried mushroom into the flattened potato dough (refer to the picture).
11: Roll it into breadcrumbs. Now serve hot, crispy, colourful & innovative “Stuffed mushroom kola urundai”
12: Heat the oil in low flame. Gently fry the kola urundai. Fry untill all the “mushroom kola urundai” are crispy and golden colour.

P.S:
I have replaced bajji mix with gram flour and all purpose flour with whole wheat flour.(This blog doesn’t use all purpose flour)
