Peanut Rice Recipe|Groundnut Masala Rice|Verkadalai Sadham:
Here is a super quick recipe to pack in the lunch box. This was shared by a friend in a group and I tried the next day. It turned out well. But I managed to click only blurry images as the rice was made in the hustle bustle mornings. Peanut or Groundnut is our family favourite and it is one of the richest sources of protein. Peanut Rice Recipe|Groundnut Masala Rice|Verkadalai Sadham
Ingredients:
Serves 2
- Rice-1 cup
- Salt-To taste
- Oil-To cook
To roast and grind to a powder:
- Peanuts-1/2 tbsp
- Gram dhal-1/4 tbsp
- Coconut-1/2 tbsp
- Red Chilly-3
- Pepper-1/2 tsp
- Cumin Seeds-1/4 tsp
To temper:
- Mustard seeds-1/4 tsp
- Urad dhal-1/4 tsp
- Groundnut-1 tbsp
- Curry leaves-handful
1.Measure and keep all the ingredients ready.
2. Dry roast the ingredients and cool down.
3. Add oil in a pan and add the tempering elements
4. Powder the ingredients into a coarse powder.
5. Mix everything together and fluff it up. Peanut rice is ready.
P.S:
Fluff the rice and add a few drops of oil.
Adjust spices as per your taste.
Don’t mix the rice when it is hot.
Wait till the mixture cools before preparing the powder.
You can add groundnut without peeling the skin.
