This recipe is made with an equal quantity of millet and wheat flour along with jaggery, coconut and butter. When it comes to sweet, I personally like foxtail millet (Thinai) out of all millet varieties because of the unique taste thinai gives when mixed with jaggery and coconut. thinai sweet puttu with coconut is my all time favourite millet food.
Foxtail millet / Thinai is a gluten gluten-free grain packed with vitamins and minerals. This has a low glycemic index and high in antioxidants. Foxtail millets are rich in Lutein and zeaxanthin which helps to keep good eye health. There are three varieties of thinai or foxtail millet…white thinai, black thinai and yellow thinai. The yellow variety is what we get easily in the market these days.
Foxtail Millet Cookies Recipe|Thinai Biscuits:
Ingredients:
- Powdered Jaggery / Naatusakkarai – 3/4 cup (75 grams)
- Cardamom – 1 no
- Butter (room temperature) – 50 grams
- Foxtail Millet Flour – 1/2 cup (50 grams)
- Wheat Flour – 1/2 cup (50 grams)
- Baking Powder – 1/2 tsp (optional)
- Pink Salt – a pinch
- Coconut(desiccated) – 1/2 cup approx (40 grams)
- Milk or Coconut milk to bind the flour
- Coconut(desiccated) – 2 tbsp for dipping
Let’s see step by step process here:
1. Wash and soak foxtail millet for an hour.
2.Filter the water and dry in shade for 20 minutes
3. When the grains still have some moisture left, grind to a fine powder.
4.G rind jaggery and cardamom to a fine powder.Dry roast the flour till nice aroma arises.
5. In a wide bowl, beat butter until it turns fluffy.
6. Add jaggery powder. Beat again together until they turn fluffy and a light mixture is formed.
7. Add millet flour, wheat flour, baking powder and salt to a sieve.
8. Sift everything together.
9. Mix gently with butter mixture.
10.Add desiccated coconut and mix again
11. Add milk or coconut milk to form a firm dough
12.Take a small portion of dough and make shapes
13.Dip in desiccated coconut and keep on the baking tray or any plate to bake
14. Heat a thick bottom kadai/pan, layer with sand or salt. You can also use a pressure cooker without a gasket and weight.
15. Place a stand and baking tray once the kadai heats up
16.Bake in medium to low heat for 20 minutes for soft cookies, 25 minutes for crispy brown cookies.
17. Cookies are done when spongy at the centre and crispy at sides
18. Let it cool completely before serving
Notes:
Keep a check on the biscuits from 8 th minute.
If using the oven, bake at 170°C for 15 to 20 minutes
These can be stored for 4 to 5 days in an airtight container
You can also prefer to freeze the dough for 30 minutes and cut into the desired shape.
Freezing dough enhances flavour and helps to make proper shapes.
