Hi, this is Sudha, an easy-going, practical and fun-filled woman. I am a dietitian by profession, for now enjoying being a mother of a 5-year-old, though tiring at times. I love to try with recipes in my free time . It all began with the thought of introducing the healthy world to my son. As we both have a bad sweet tooth, I never miss trying any sweet in a healthy way.

Urad Dhal Cake Recipe
Ingredients:
- Urad dhal – 3/4 cup
- Jaggery- 1/2 cup
- Oil- 1/4cup
- Milk -3/4cup
- Baking powder – 1 tsp
- Baking soda- 1/2tsp
- Vanilla essence – 1tsp
- Tutty Frutti or any chopped nuts- as needed.

Procedure:
Pre preparations:
Dry roast urad dhal for few minutes and powder it.
Sieve the flour twice.
Powder the jaggery.
Grease an aluminum pan with butter.
Dust the nuts or tutty fruity with urad dhal powder
Procedure:
1.Measure and keep all ingredients ready
2.Mix oil and jaggery powder well. To this add 1/2 cup milk and mix until all blends well.
3. Add urad dhal powder slowly, 1tbsp at time and mix, repeat the same with the entire powder.
4. Add the remaining 1/4 cup milk,little by little if the batter is thick.
5. Add baking powder, baking soda and vanilla essence.
6. Mix well, add dusted nuts, mix and pour it in the baking tray.
7.Bake in a preheated oven /OTG at 180 degrees C for 30 minutes.
Notes:
Roasting and sieving urad dhal is a must.
Cocoa powder can be replaced with vanilla essence. They help to mask the dhal flavour.So don’t skip.
I used powdered jaggery so it was easy to mix ,and the brown colour is the jaggery.
You can replace oil with butter since I didn’t have butter I used oil.
Dusting nuts or tutty fruity helps it to get mixed evenly, if not dusted nuts will get settled only at the bottom of the cake.
The flavour filled the entire house, the taste was heavenly, no one can spy on urad dhal unless you reveal it. I felt the taste was great the next day.

P.S:
Please read through the manual of your oven/otg to fix the right temperature and mode.
Keep checking for readiness after 5 minutes in the microwave and after 25 minutes in OTG.
The softness and density depend on the flour and the number of times you sieve.
Wait for at least an hour before slicing the cake.
Go through the manual to fix the preheat temperature and timings.
The timing might vary from 25-40 minutes (temperature 180 degree C ) in OTG at used and tray used.Have a check using a toothpick after 25 minutes.
Using a wet cloth to wrap the tray after taking out of OTG/microwave helps in getting the cake out clean and perfect.
Dip the knife in hot water to slice the cake perfectly.
Sieving the dry ingredients is a major step which prevents disasters.
You can also top it with any nuts of your choice.
It stays good for 3 days at room temperature and 5 days in the refrigerator
Be generous in using butter to grease the pan.

This can be offered to babies above 1 year.
For babies below one year replace jaggery with homemade dates syrup
