Coconut Rice Recipe
Would you be laughing at me if I say that this coconut rice recipe is my favourite among all 45 variety rice recipes I have posted so far? Weird right? I am a fan of mom’s version of coconut rice and I can have it any time. I have so far not posted any simple or usual variety rice recipes like lemon rice or puliogare. Because I do them so rare and try to include some vegetables or legumes and make them extra nutritious.
Coconut Rice Recipe:
I am a lover of coconuts. Coconuts in any way are our family favourite I can say. Coconuts are very healthy for you to consume on a daily basis.
Ingredients:
- Rice-1 cup
- Grated Coconut-1 cup
- Salt-To taste
- Ghee-To cook
To Temper:
- Cashews-8
- Mustard seeds-1/4 tsp
- Urad dhal-1/4 tsp
- Gram Dhal-1 tsp
- Curry Leaves-Handful
- Red Chillies-2
Coconut Rice Recipe:
Procedure:
1. Cook and fluff the rice well.
2. In a pan add ghee and temper with the mentioned items.
3. Add the grated coconut and saute till it turns non sticky. Add salt finally. 4. Let it cool down completely.
5. Add to the rice and serve with fry. Yummy coconut rice is ready.
P.S:
Ensure not to fry the coconut more.
Adjust the spice and salt level as per your taste.
Skip salt and red chillies for kids below one year.
