Groundnut Salad Recipe
I love munching on boiled legumes as salads and you can find recipes of Mexican bean salad and sprouts salad and groundnuts are our family favourite. Give us in any form we would love it. Groundnut Salad Recipe:

Ingredients:
Serves 2-3
- Boiled peanuts-1 cup
- Onion-1 finely chopped
- Tomato- 1 small
- Pepper-1/2 tsp
- Salt-To taste
- Lemon Juice-1 tbsp
- Puffed Rice-Handful
- Coriander & Mint- To garnish
Groundnut Salad Recipe
Procedure:
1. Soak the groundnuts for 6 hours.
2. Drain and wash well.
3. Pressure cook for 5 whistles.
4. Remove excess water if any
5. In a wide bowl add everything except lemon juice, puffed rice.
6. Mix them together. Finally, add the lemon juice
7. And garnish with puffed rice. Healthy groundnut salad is ready.
P.S
I used cherry tomatoes from my garden. You can use normal tomatoes too.
Some groundnuts need only 3 whistles to cook.
Ensure that the groundnuts don’t get mashed.
Adjust pepper quantity as per your taste
