Moringa/Murungai is a miracle tree. Every part of the tree is so useful and the benefits of the leaves are extremely bountiful. I love ragi adai with drumstick leaves and drumstick leaves soup. The below murungai dosai recipe is an easy one to make among all recipes of moringa leaves. Health Benefits of Drumstick Leaves:
Moringa leaves give 1000 gms of calcium while the same amount of milk provides you only 200-300 gm of calcium.
Drumstick leaves have 28 mg of iron when compared to beef which gives you only 2 gms.
They are rich in calcium, potassium, zinc, magnesium, iron and copper. Vitamins like beta carotene of Vitamin A, Vitamin B such as folic acid , nicotinic acid, D and E are also present.
The leaves also have a low calorific value and even obese people can have it in their diet.

Murungai Dosai Recipe
Ingredients:
- Dosa Batter 1 cup
- Moringa Leaves-1 cup
- Shallots-1.4 cup (Chopped)
Procedure:
1. Measure and keep the ingredients ready.
2. In a wide bowl dilute the dosa batter and add the leaves, shallots (Salt- If needed).
3. Mix everything together.
4. Heat the dosa pan and grease with some oil.
5.Use a ladle, pour the batter, spread evenly.
6. Drizzle some oil and cook both the side.
7. Repeat the same for the remaining amount of batter too.
8. You can make it soft or crispy by adjusting the water content.
9. Serve the Murunga Keerai Dosai with sambhar or chutney.
P.S:
You can use dried moringa leaves too.
Chopping the leaves can be done or even steaming and grinding into puree can be done.
