Kaatuyanam Arisi Appam Recipe- With detailed information and recipe. On my journey to bring out the traditional healthy rice varieties and indigenous native foods I made this attempt for Krishna Jayanthi. I was doubtful because I made my first try with this rice in a festive recipe and also used coconut jaggery for the first time. But to our surprise, this appam turned out to be the best version of appam we have made. What is Kaatuyanam Rice?
The rice variety is from TamilNadu and it is one of the traditional red rice variants. The name signifies two things – The crop grows so huge that an elephant can hide behind it and eating this rice gives your the strength of an elephant. Yaanam/Yaanai is an elephant in Tamil. The crop can grow in any climate and even in the driest conditions. It is blackish-red in colour. Naturally, this rice doesn’t need much maintenance during the growth period

It is rich calcium, magnesium and fibre, hence making it help in digestion and bone, teeth, hair growth.
With most highly polished rice, chances of obesity and diabetes are high with lifestyle disorders. Whereas this Kaatuyaanam is highly rich in calcium and not in carbohydrate.
It helps you fight against the knee, joint pains and helps in fighting arthritis.
The bran contains anthocyanins and is very rich in minerals and vitamins.
It has anti-ageing properties and helps you fight heart diseases.
Most women are running around with joint pains and many take calcium supplements. Instead of supplements please try including our indigenous rice in your daily meal

Kaatuyanam Arisi Appam Recipe
Ingredients:
- Kaatuyanam Arisi- 3/4 cup
- Urad Dhal-1/4 cup
- Fenugreek-1/4 tsp
- Salt-As required
- Ghee-To cook
- Coconut Jaggery-1/4 cup
- Banana-1 small
Kaatuyanam Arisi Appam Recipe
- Measure and keep all the ingredients ready.
- Wash and soak rice, urad dhal for 4 to 6 hours.
- Grind it well in a mixer into a smooth batter. Don’t add much water. Just sprinkle water to help smooth grinding
- In a saucepan add less than 1/4 cup and dissolve the jaggery.
- When the jaggery is dissolved, filter it for impurities and add to the batter.
- Add salt and mix the batter well.
- Heat a paniyaram pan and grease with ghee.
- Use a ladle, scoop batter and pour to each hollow.
- Cover and cook, when done flip sides and cook the other side too.
- Repeat the same for the remaining batter.
- Kaatuyanam Arisi Nei Appam is ready.
P.S:
You can add a pinch of baking soda.
If you have time rest the batter for 2 hours and then make it.
You can use normal jaggery or palm jaggery too.
For babies below one year use slightly diluted dates syrup instead of jaggery.
Adjust water as per batter thickness. The batter should not be too thick or too flowy.
The colour depends on the jaggery used.
You can also fry it in oil as I have shown in INSTANT WHEAT FLOUR SWEET APPAM | GODHUMAI APPAM.
Use ghee as much as possible in the paniyaram pan. It just adds on flavour.
