Rajamudi Rice Tapioca Adai:
Rajamudi rice is a traditional rice variety from Karnataka. This unpolished rice looks like a mix of brown and red colour. The history traces to Wodeyars period of Mysore, approximately during 14 th century. I had a packet from Organic Positive Store and this Rajamudi Rice Tapioca Adai was my trial with it.
Benefits of Rajamudi Rice:
The dietary fibre in the rice makes it great for daily consumption.
The glycemic index of this rice is low and hence best suited for diabetic patients.
The antioxidants and the zinc present in this rice prevents the body from infections.
Rajamudi rice helps in lowering cholesterol and prevents heart diseases.
How can I use Rajamudi Rice?
- You can open cook this rice after soaking for 20 minutes and consume instead of regular rice.
- You can use this for your idly/dosa/chilla/adai batter.
Rajamudi Rice Tapioca Adai
This recipe is an altered version of my previous trial of tapioca Adai
Ingredients:
Makes 6-8
- Rajamudi Rice-1 cup
- Tapioca-1 cup(chopped finely)
- Red Chilly-2 or as per taste
- Ginger-A small piece
- Garlic – 4 pieces
- Onion-1/2 cup(Chopped Fine)
- Hing-A pinch
- Salt-To taste
- Oil-To drizzle
- Water-1/2 cup
Rajamudi Rice Tapioca Adai
Procedure:
- Measure all the ingredients and keep them ready.
- Soak rice for 2-3 hours with red chilly after rinsing and washing well.
- After 2 – 3 hours, drain the water.
- Grind everything together except onion and oil. First, add the chopped tapioca and ensure it is blended well and then add rice.
- Saute the chopped onions and add to the batter.
- Let the consistency be slightly thick.
- Heat a dosa pan and grease with some oil.
- Take a ladle of batter and spread it gently.
- Drizzle with oil and cook it by closing in medium flame.
- Flipside and cook.
- Repeat the same for the remaining batter.
- Maravalli Kizhangu Adai is ready to be served with any chutney.
P.S:
You can grate the tapioca for easy grinding.
You can skip adding onions if you wish.

Don’t skip adding ginger and hing.
If you can handle garlic taste please add it to while grinding.
Adjust chilly as per taste.
Take care while spreading the batter.
Maintain the flame between low-medium.
This is suitable for babies above 6 months.
