Thooyamalli Manga Sadham:
Ingredients to cook thooyamalli rice in open pot method.
Rice-1 cup
Water-4 cups
Ingredients for manga sadham:
- Raw Mango-1 (Medium sized)
- Shallot-1 cup(chopped)
- Groundnut-2 tbsp
- Oil-To cook
- Salt-To taste
- Rice-1 cup
- Green Chilly-2
To Temper:
- Mustard seeds-1/4 tsp
- Split Urad Dhal-1/4 tsp
- Gram Dhal-1/2 tsp
- Curry leaves
Thooyamalli Manga Sadham
Procedure:
1.Wash and soak the rice for an hour.
2.In an open pot add four cups of water and heat it.
3.In the meantime rinse the rice well and drain the water.
4.When the water the boils add the rice. Add a few drops of oil as we are making raw mango rice
5.Cook in low flame for 20 minutes.
6.Use a holed plate and drain the excess water.
7.The thooyamalli rice is cooked and ready.
- Wash and peel the raw mango.
9.Grate it using a grater and set aside.
10.Dry roast groundnuts and peel the skin after cooling.
11.Add oil in a pan and temper with mustard seeds, urad dhal, gram dhal and curry leaves.
12.When tempering is done add chopped green chilly and shallots and saute well.
13.When shallots turn golden brown add the grated mango and saute till raw smell vanishes (The mixture will turn non-sticky).
14.Cool it and add the groundnuts,salt and mix it with rice.

These indigenous rice varieties don’t need fertilizers or chemicals to grow. So you have to store carefully to avoid any bugs. You can buy two or three varieties every month in minimal quantity and try. Prefer using red chillies and vasambu or bay leaves inside open packets. If you buy in large quantities please freeze them and used dried neem leaves in the container.

Glad to visit your page. I have recently tried using thooyamalli rice. The starch is not thick like other traditional rice. Please clarify whether it will be like this or should I change the shop.
