Baked Vegetable Fritters Recipe – With lockdown comes up all our cravings for snacks and kids find solace in a variety of snacks. You can try to keep the frequency of fried snacks lesser and replace unhealthy ingredients with healthy ones. You might have a look at the collection of no deep fry / no-bake snack recipes. In a FB group, I came across this recipe with eggs and it was from Kiruthi who is an innovative person running the Veg Foodista channel. I made the tweaks as per our liking and the dish was ready in 30 minutes.
Baked Vegetable Fritters
Ingredients:
- Onion-1 medium-sized
- Tomato -1 medium-sized
- Corn kernels-1/2 cup
- Capsicum – 2 tbsp (finely chopped)
- Gram Flour-1 tbsp
- Corn Flour-1 tbsp
- Flaxseed gel- 1 tbsp-2 tbsp
- Cheese grated- 2 tbsp + 1 tbsp for garnishing
- Italian Herbs- 1/2 tbsp
- Salt- To taste
- Red Chilly powder-1/2 tbsp
- Pepper powder-1/2 tbsp
Baked Vegetable Fritters
Procedure:
1.Measure and keep all the ingredients ready.
2.Finely chop all the vegetables and have them in a wide mixing bowl.
3.Preheat the OTG to 180 degrees C.
4.Now add the spice powders and cheese along with salt.
5. Finally add gram flour and rice flour.
6. Mix them together by adding 1 tbsp of flaxseed gel.
7. If they don’t bind together you may add 1/2 to 1 more tbsp gel.
8. Place butter paper on an oven tray and place the fritter mixture by flattening it.
9.You may garnish with some cheese.
10. Bake for 20 minutes in a preheated OTG.
11. Wait for the fritters to slightly cool. Carefully remove from the butter paper
12. Enjoy baked vegetable fritters.
Notes:
- Flaxseed gel – Roast 1 tbsp of flaxseed. Powder after cooling. Mix with 3 tbsp of water. This is the equivalent of egg
- You might coat with bread crumbs and drizzle some oil if you want a crispy version.
- Without OTG, you can shallow fry on a tawa.
- Feel free to play around with the vegetables.
- Add the flaxseed gel in parts.
