Ingredients:
- Soora Kuruvai rice-1 cup
- Handpound /unpolished thanga samba-1 cup
- Balck urad dhal-1/2 cup
- Fenugreek-1/4 tsp
- Salt-To taste
Procedure:
1. Measure the rice, clean them well.
2. Add urad dhal, rice, and fenugreek to a wide vessel.
3. Rinse well and soak all of them together for 6-8 hours.
4. After 6-8 hours, drain the excess water and add to a grinder to make the batter.
5. Sprinkle water then and there and grind into a smooth batter (Maximum of half cup of water).
6. Let it ferment overnight or 8 hours.
7. After fermentation, dilute to make dosa batter by adding the required amount of salt.
8. Heat a dosa pan, spread the batter, and drizzle some oil.
9. Cook both sides.
10. Soora Kuruvai Dosa is ready to be served. Tomato chutney is the best accompaniment.
What is Soora kuruvai rice?
It is a native red variety from Tamilnadu. This name comes from the season “kuruvai” in which the crop gets harvested. The colour is dark brown and has a coarse texture. This paddy is said to have survived the tsunami which happened in 2004 in the district of Nagapattinam. All traditional rice varieties are drought and flood-resistant. This soora kuruvai for scientifically found and proved to be safe even in coastal regions during tsunami. The grain is yellow in colour with stripes, rice is dark brown in colour, bold rice.
