Pumpkin Sauce Pasta Recipe:

Coming to today’s recipe “Pumpkin Sauce Pasta Recipe” – you shouldn’t miss trying this rich, easy and flavourful pasta. You would definitely not want to miss this for your kids who can be very choosy about their vegetables on the plate. Of all the pasta and noodles varieties I have made and had this would top the list.
Pumpkin Sauce Pasta Recipe:
The inspiration for this recipe is from my latest favourite pumpkin soup. You can grab a bowl and feel full for your lunch or dinner. Have you heard of the term finger-licking good? These two dishes would qualify for that term. The below version of pasta is vegan. You can feel free to add the cheese you want to make it richer and tastier.
Pumpkin Sauce Pasta Recipe
Serves 1
Ingredients:
- Pasta/Noodles-150 gms
- Pumpkin- 1 cup ( roughly chopped)
- Garlic-4-5
- Onion-1 small(diced)
- Coconut milk-1/4 cup(thickest)
- Italian Herbs-1/4 tsp
- Pepper powder-1/4 tsp
- Salt-To taste
Procedure:
1. Measure and keep all the ingredients ready.
2. Remove the seeds and peel the skin of the pumpkin. Roughly chop and cook them along with garlic. If you steam cook, steam for 15 minutes or else pressure cook for 2 whistles.
3. In a saucepan add water and cook the noodles/pasta (al dente). Run through cold water immediately to avoid mashing. I have used the water in which chickpeas got cooked.
4. When the pumpkin and garlic are cooked, cool down and grind into a thick puree.
5. In a pan sauteed some chopped onions along with bay leaf in ghee. If the noodles is cooked drain and set them aside.
6. Add the pumpkin puree to the sauteed onions and allow them to thicken. (Non-pouring from a spoon)
7. Now add salt, coconut milk, herbs, pepper and give a quick boil.
8. Switch off the stove and add the noodles to the sauce and toss it gently.
9. Pumpkin sauce pasta is ready to serve
Notes:
Be careful to cook the noodles to al dente form.
Washing in cold water prevents from noodles getting smashed.
You can add some cheese to the boiling sauce too.
You can add a drop of oil while boiling pasta.
Gently toss and don’t stir vigorously after adding pasta to the sauce.
Consult with your doctor before offering any new food to the baby.

What pasta/noodles have you used?
These are whole wheat noodles sourced from Sprouta Foods.
Will this be sweet because of the pumpkin?
No. Prefer slightly yellow pumpkins.
Can I replace it with any type of pasta?
Yes, you can replace it with any type of pasta.
If I choose to add animal milk instead of coconut milk can I add it?
Yes choose full-fat milk
Is pasta healthy for kids?
Initially, before knowing about durum wheat vs whole wheat, I was using durum wheat pasta only. But my never-ending search for healthy alternatives helped me finding whole wheat pasta at Fab India outlets. You can include pasta in a healthy way monthly once as it is not our traditional or local food. Pasta can be given to babies as young as six months as it is great finger food (minus the salt).
Why did you prefer a vegan version?
I wanted to avoid cheese because of the scarcity of unprocessed cheese in the market.
