Broken Corn Idli Recipe – with images & step by step instructions. Corn Rava or Maize Rava caught my attention 7-8 years ago when we found them in the supermarkets of Hubli. You could have seen the broken corn puttu recipe on the website already. We have tried upma and instant uthappam just like the rava uthappam.
Broken Corn Idli Recipe:
This is an instant idli recipe. You can also try it with overnight fermentation, just like we did with the rava idli recipe. Vermicelli and Rava are two instant food varieties most of us choose for ease of use and comfort. My humble suggestion here would be to look into the ingredients that go inside both. Rava is generally the most refined form of wheat almost similar to maida with most nutrients lost. Similarly, with vermicelli, the major ingredient is maida and not whole wheat.
What would be the better alternatives?
You can use rava and vermicelli once in a while loaded with vegetables. But if you wish to include them often try exploring millet varieties or whole wheat varieties. Few recipes from the website with such options are here below
Ingredients: Makes 6-8
- Corn Rava/ Makki ka Sooji – 1 cup
- Curd-3/4 cup
- Grated Carrots-2
- Gram Dhal-1/2 tsp
- Mustard seeds-1/4 tsp
- Urad Dhal-1/4 tsp
- Ghee or Oil-1 tbsp
- Curry leaves-A spring
- Turmeric Powder-A pinch
- Salt-To taste
Procedure:
1. The previous night, add the corn rava to curd and mix without lumps.
2. Keep it closed in a warm place.
3. The next morning or after 6-8 hours you would find the mixed rava slightly raised and fermented. Add half a cup of water and salt.
4. In a pan temper, the tempering elements and slightly fry the carrots. I have added them raw here.
5. Add this to the batter and mix well.
6. Grease the plates of idly with oil and pour the batter with a ladle.
7. Steam cook for 10 – 15 minutes and corn rava idlies are ready.
8. Serve with coconut chutney.
P.S:
Babies above 8 months can have this.
Ensure to have introduced all items before and eliminate allergies.
Skip the salt for babies below one year.

If you making the same day within 30 minutes add 1/4 tsp of baking soda plus 1 tsp lemon juice.
The batter would rise if the atmospheric temperature is slightly warm and the curd is sour.
You could soak the rava overnight and make the rava idly in the morning.
The flour should be slightly coarse.
You can even ask for Makki ka sooji or corn rava and slightly powdered it and use it. We used to get it predominantly when we were at Hubli.
