இடியாப்பம்/ சேவை /சந்தவை – This is great option for breakfast and dinner. Since it is steamed and rice based it can be cooked for babies above 8 months to elders around 80 years. I love this with grated coconut & ghee. My son loves it with jaggery & coconut milk. You can prepare many varieties out of it just like variety rice(Lemon sevai,coconut sevai,tomato sevai,pepper sevai,mixed veg. sevai) I shall include all those very soon. Idiyappam at home follows a traditional method and I have posted it already here. It is a tedious method and I have not seen the recipe with many. This is an easy way to prepare idiyappam and my MIL follows it.
- Rice flour-1 cup
- Hot Boiling water-1 to 1 & 1/2 cups
- Salt-To taste
1.Boil water in a vessel. Add salt to it.
2.When it begins to bubble,add water to the flour slowly and mix well.
3.Knead a smooth dough by mixing well. In the meantime switch on the gas by placing a idly maker on it.
4.Without much delay, use a string hopper maker and squeeze the string in a idly plate.
5.Steam cook and serve it hot.
Add water slowly . Be careful as you knead.
Adding more water and then adding flour to compensate it will make the string hoppers thick.
Make it when it is still hot. It will be easy to press in the string hopper maker.
The dough will be smooth and non sticky if kneaded to the right consistency.
