Today’s post is the most favourite recipe of mine among all tamil new year special recipes.It is RAW MANGO PACHADI.It is a kind of a jam. It is one of the special dishes added on Tamil New year because it has a combination of tastes. On Tamil New Year, we offer God all 6 tastes by incorporating in various dishes. This maanga pachadi is has sourness of mango,sweetness of jaggery and hot taste from chilly. It is an yummy combo with curd rice in hot summer.Let us get into the recipe
- Raw Mango-1 cup(sliced)
- Jaggery-3/4 cup(Grated)
- Water-1 cup
- Salt-A pinch
- Oil-To cook
- Mustard Seeds-1/4 tsp
- Urad Dhal-1/4 tsp
- Curry leaves
1.Wash the mango and peel the skin.
2.Use a grater/scrapper/slicer and make thin pieces out of it.
3.Pressure cook the raw mango slices and set it aside.
4.Add oil in a pan and let it get heated.
5.Temper with mustard seeds,green chillies,urad dhal and curry leaves.
6.Add grated jaggery and water and mix well.
7.Let it boil well.
8.When it begins to thicken add the mango and a pinch of salt.
9.Mix well and stop cooking when it begins thickening.
Cook in medium flame
Prefer a medium sour mango
Killi Mukku Maanga goes well in this recipe
I used organic jaggery here. If you doubt impurities in jaggery,dissolve jaggery in water,filter and then add in step 6.
It should in a constituency similar to jam.
Adjust chilly as per taste.
If used properly this stays well for a week when refrigerated.
This can be offered to babies above one year.
Always have a word with your pediatrician before offering any new food.
The colour depends on the jaggery used.
Adjust jaggery depending on sourness of the mango used.
Choose a semi ripe mango.
