Rajma Walnut Cheese Cutlet:
Good day everybody!Kitchen Kathukutty is here with a healthy and yummy recipe for today.It is again a random try which I had made to use the leftover rajma.This would be a perfect recipe for your kids snack box or an excellent starter during parties. I have not even used any binding agent like rusk powder or corn flour and thus making it extremely nutritious. Do give it a try and let me know your feedback.
Ingredients:
- Rajma-1/2 cup
- Walnut-Handful
- Cheese-1/4 cup(grated)
- Potatoes-2 big
- Salt-To taste
- Ghee/Oil-To shallow fry
- Chilly Powder-1/4 tsp
- Pepper powder-1/4 tsp
- Sambhar Powder-1/4 tsp
- Coriander Powder-1/4 tsp
- Garam Masala-1/4 tsp
Procedure:
1.Soak rajma overnight and pressure cook along with potatoes.
2.Grind walnuts and cooked rajma in a jar or use a masher.
3.Mash the cooked potatoes and add the walnut+rajma mixture to it.
4.Add grated cheese and all ingredients except ghee/oil and mix well.
5.Gather this into a mass and make small balls out of it.
6.Flatten it or use moulds.
7.Shallow fry them in ghee or oil in a dosa pan in medium flame.
8.Serve it warm.
Notes:
You can add any legume instead of rajma.
Adjust spices according to your taste
My potato +rajma were not mushy ,so I have not used any binding agents.If your mixture is watery or not yielding perfect shapes you can use corn flour paste+rusk powder/bread crumbs as I had used in my sweet potato tikki recipe
Avoid salt for babies less than one year.
Babies above 6 months can be given with less spices after having ruled out allergies of individual ingredients.
Always have a word with your doctor before offering any new food to babies.
