Here comes one more random attempt with millet flour in baking without raising agents. I wanted to check the result of not using baking powder/soda in baking.My cookies were 100% successful.This cake got slightly dunked in.And I believe it is because of not using raising agents or curd. I am looking for experts to share their opinion on this.Here is the story of this bake 🙂 I ended up burning the top of my cup cakes but successfully made this cake with my little one’s help. My boy is so keen about what mommy cooks for him for every meal.He urges me to plan my every meal,every snack of the week well ahead.He has his own choices and he would love to assist me in cooking especially baking. This was planned to be eggless choco chip cup cakes with ragi and flax seeds without raising agents. I accidentally altered the mode and extended the timing with no proper knowledge and burnt the top of cup cakes. So I poured the second part of the batter to a cake pan,LO did the mixing ,garnishing and converted it to tutti fruity cake 🙂 He removed the burnt top of the cup cakes and stored them for this snack box for the coming week. How much should we learn from these kiddos? ! I even forgot the exact measurements as this was made long back. I have given the procedure and other details for both cake and cup cake here.
Some of the healthy baked goodies with no whites are here below for you to try
- Ragi Flour-1/2 cup
- Whole wheat flour-1/4 cup
- Jaggery-1/2 cup(I used Evaporated cane sugar)
- Oil-1/4 cup
- Choco Chips-1/4 cup
- Tutti Fruti-3 tbsp(Optional)
- Flax Seeds Powder-1 tbsp
- Warm Water-3 tbsp
- Butter-To Grease
- Baking Powder-1 tsp(I skipped)
1.Measure and keep all ingredients ready. Mix flaxseed powder with warm water and let it get set.
2.For cup cakes ,pre heat oven to 165 degrees for 10 minutes.
For cake, preheat oven to 250 degrees for 10 minutes.
3.For cup cakes,line the tray with cup cake liners
For cake ,grease the pan with butter and keep it ready.
4.Sieve ragi,whole wheat flour for 3-5 times.
5.In wide bowl add oil,powdered jaggery and mix well.
6.When the jaggery is completely dissloved,add the flax seeds mixture,sieved flours and choco chips.
7.Mix well and pour it to the cake mould.If you are making cup cakes pour into the mould and bake at 165 degrees for 7-10 minutes.
8.Garnish with tuti fruti and bake for 25 minutes at 180 degrees.
9.When the OTG gets switched off check if its done perfectly using a tooth pick.
10.Take the cake pan out of the OTG (IF tooth pick comes out clean) and place it on a wet cloth/towel for 15
For cup cakes keep checking after 7 th minute.
Using a wet cloth to wrap the tray after taking out of OTG helps in getting the cake out clean and perfect.
Dip the knife in hot water to slice the cake perfectly.
Sieving the dry ingredients is a major step which prevents disasters.
Wait for atleast an hour before slicing the cake.
Go through the manual to fix the preheat temperature and timings.My OTG suggested preheating at 250 degrees for 10 minutes.
The timing might vary from 25-40 minutes depending on the oven used and tray used.Have a check using a tooth pick after 25 minutes.
Be generous in using butter to grease the pan.
The cake stays good for 5 days in room temperature.
I used gingelly oil and evaporated cane sugar.
This can be offered to babies above one year(milk & sugar,salt should be avoided for babies below one year)
